This paper is based on the existing minced fish products cutting machine, aimed at the problems existing in the cut. Original equipment can only cut off the movement up and down, influence the cutting quality, improved into automatic following cutting machine, to achieve the efficiency and quality of comprehensive promotion.This paper introduces food machinery research status and development trend,expounds the deficiency of domestic development, as a background to elicit subject, this paper introduces the original minced fish products cutting machine working principle and deficiencies, to find clear direction for after improvement.Find the cause of the cutting quality is not high, this paper puts forward cutter automatically follow cut off, when the cutter and material piece of synchronization, the knife cut, to ensure the quality of incision, on the basis of improving the efficiency of cut off. Introduces the food machinery industry common reciprocating mechanism, through the analysis and comparison, choose suitable institutional improvement. Then introduced the PLC controller, inverter, selection of three-phase motor, touch screen, etc.Using the Adams simulation software dynamic simulation analysis was carried out on the cutter, get data and related curves. Even on the part of the more stress finite element analysis.Finally, the paper introduces the design of the control system, PLC as the controller and the touch screen as human-machine interface. Is mainly composed of initialization program, frequency control of motor speed, servo control program of three parts. Each production picture detail drawing of the touch screen, the control button and the parameter of the cutter input window integration on a touch screen,the staff more convenient operation and to check the production situation.In this paper, the cutting machine improvement and subsequent research has certain reference value.
