Determination On Cholesterol Of Inner Mongolian Domestic Animal Meats And Comparison Of Two Detection Method

One hundred and thirty-nine meat samples,including 139 beef,50 sheep meat,13 goat meat,15 horsemeat 5 8 pork,12 bactrian camel meat and 5 deer meat were collected from Hulun Buir,Xilin Gol League,Bayannur League east to west of Inner Mongolia,including the advantageous grassland,half farming and half pasturing land and suburb agriculture areas.Cholesterol contents were determined by gas chromatography,and compared among species,body cuts,gender,age,slaughtering season and farming strategies(pasturing vs barn feeding).Cholesterol of 92 samples were also determined by colorimetric method to compared with GC methods,by means of detection limit,precision/RSD and accuracy/recovery.Average cholesterol of silverside(fat did not removed)and rib(present fat and lean meat)(X ±SD,mg/100g)of the seven domestic animal were:goat meat 56.62±12.62,sheep meat 50.41 ± 11.46,beef 48.84± 11.12,pork 45.92± 14.42,horsemeat 44.68± 11.45,donkey meat 39.63±8.59 and bactrian camel 139.63±8.59.Cholesterol level of Inner Mongolian livestock meat was significantly lower than the data in China's Food Composition Table,and lower than data of correlating reports.Besides sheep meat,cholesterol of goat meat was significantly higher than the other five animals.Cholesterol of beef and sheep meat were significantly higher than that of bactrian camel,and no significant difference among mutton,beef and pork.The more separable fat the higher cholesterol,i.e.Cholesterol of fatty tail of sheep was highest among body cuts.Cholesterol of pig ribs cut was significantly higher than silverside(fat did not removed)of pig.Cholesterol of adult cattle was higher than that of one and a half years old to two years old cattle;no significantly difference among all age groups of sheep.Cholesterol of male sheep was significantly higher than the female sheep but neither of them had differed significantly with that of castrated sheep.Cholesterol of sheep was no significant difference between winter/spring and summer/fall.Cattle with pasturing feeding was higher than that of barn feeding,but could not rule out the interaction effect with ages.Pretreatment condition was optimized in this study:concentration of KOH was 50g/100ml,saponification time was 80min with 90?.detection limit,recovery and precision(RSD)of colorimetric method were 2.lmg/100g,91.2%and 3.22%,and that of gas chromatography were 0.3mg/100g,95%and 2.05%.RSD,SD and RSD of colorimetric method were respectively 4.74%,9.87%and 3.13%higer than gas chromatography.
