A Pilot Study On Macro And Micro Mineral Elements Profile Of Inner Mongolian Sheep Meat

Inner Mongolia is occupying more than half north part of China,and from the east to west covering the largest meadow steppe,typical grassland,desert and half desert grassland.Owns various cattle and sheep breeds those are favered much by Chinese because of their delicious meat.However,Inner Mongolian mutton lack systemic nutritional studies or quality assessment.A total of 77 sheep meat samples were collected from hulunbuir grassland(Ewenki banner and Uzhumchin Left Banner),Horqin Grassland(Horqin Right Middle Banner,Wengniute Banner),Mountain grassland(Hexigten Banner),Hunshandak Sandy land(Sonid Left Banner,Sonid right Banner and Xianghuang Banner),Turnote plain(Horinger County)and Hetao plain(Hanggin Rear Banner),and 22 macro and micro elements were determined.Further 11 beef and horses meat samples were collected from Ewenki Banner and determined 12 trace elements.Profile of macro and trace elements and clustering properties the meat samples were analysied by chemometrics and discriptive statistics.The average level of macro elements of Inner Mongolian sheep meat samples were(X±SD,mg/100g)P150.06±52.43,K249.86±98.10,Na62.79±16.66,Mg17.36±6.41 and Ca 3.04±1.18.Macro elements in silverside(lean only)of sheep were the highest,while those of the fatty tail were the lowest,and Ca was the highest mineral in fatty tail samples of sheep.P,K and Mg indicated positive liner correlation with lean portion of meat samples,i.e.the less the seperable fat,the higher the three minerals.Profile of macro minerals showed age differences;Geographical origins can not be discriminated by the five macro mineral profiles,although some banner or county showed seperable trend.Profile of trace elements has species specificity,difference of Ewenki Banner sheep,cattle and horses concering micro elements characters,and the results of PCA analysis showed that they have been extremely distributed.Beef had more Rb,Ag and Cs than sheep but less Sn and Sb.However,there were no extreme distribution;Using micro elements fingerprint could distribute body cuts and ages of sheep.The higher ratio of lean,the more content of micro elements.There was more Mn in tail of sheep,except that,other micro elements were generally least.The Essential trace elements of adult sheep and lambs is no difference,but unessential trace elements had more Cd than lambs but less Sb.Sheep in hulunbuir pasture land could be distinguished with that in other banner or county;West WuZhu MuQin and hulunbuir are close,and micro elements fingerprint characters of sheep in these 2 places were closest Cd?Sb?Se and Cs of Ewenki Banner sheep made a great contribution to geographical origins distribution;Both Khorchin right banner and Wengniuteqi lies in Horqin Grassland and Songliao Plain,and micro elements fingerprint characters of sheep in these 2 places were similar;Midwest highland,Sonid Left Banner,Sonid right Banner and Hanggin Rear Banner,where micro elements fingerprint characters of sheep were close;The characters in Hexigten Banner was different from other banner or county.This research fill in gaps of micro elements systemic statistics of Inner Mongolia sheep,and provided basic date for setting up regional livestock meat nutritions date black.In addition,lay the foundation for tracing the source of mineral and distinguishing sheep;Meanwhile,offer a reference for scientific supplementary feeding of micro elements for sheep.
