At present there are a few research reports about dried bean curd,and few research reports about effect of mineral composition on the quality of dried bean curd.The subject was based on the study of scientific and impeccable evaluation method of the quality of dried bean curd,and by correlation analysis between mineral composition and the quality of dried bean curd,studied the effect of mineral composition on the quality of dried bean curd.It provided theoretical basis for standardization and industrialization in the production of dried bean curd production,and had application value of research on enhancing quality of dried bean curd.The study on the evaluation method of the quality of dried bean curd was implement by the method of instrument analysis,and key measure indexs of quality evaluation of dried bean curd were established,which were hardness,adhesiveness,springiness,cohesiveness,gumminess,chewiness and resilience;shear and stretch;moisture.The correlations between mineral composition and the quality of dried bean curd which were under the condition of the same water quality were studied by correlation analysis.Correlation analysis showed,there were no significant correlation between mineral composition in the brine and the quality of dried bean curd which were under the condition of the same water quality.There were no significant correlation between mineral composition in the soybean and the moisture of dried bean curd;there were very significant positive correlation between manganese and magnesium in the soybean and the adhesiveness of dried bean curd;there were significant positive correlation between copper and zinc and the cohesiveness of dried bean curd;there were significant positive correlation between zinc and the shear of dried bean curd;there were significant negative correlation between sodium and the stretch of dried bean curd.There were significant negative correlation between zinc and manganese in the dried bean curd and the moisture of dried bean curd;there were significant positive correlation between magnesium in the dried bean curd and the adhesiveness of dried bean curd,which was consistent with the correlation in the soybean;there were significant positive correlation between phosphorus and the shear of dried bean curd;there were significant negative correlation between zinc and the stretch of dried bean curd.The correlations between mineral composition and the quality of dried bean curd which were under the condition of the different water quality were studied.Correlation analysis showed,there were no significant correlation between mineral composition in the brine and the moisture of dried bean curd which were under the condition of the different water quality;there were significant negative correlation between copper in the brine and the adhesiveness of dried bean curd;magnesium in the brine had greater impact on the quality of dried bean curd,and there were significant negative correlation between magnesium and the adhesiveness,and very significant positive correlation between it and springiness and cohesiveness,and significant positive correlation between it and resilience;there were significant positive correlation between iron and the shear of dried bean curd;there were significant positive correlation between chlorine and the stretch of dried bean curd.There were significant positive correlation between calcium in the soybean and the moisture of dried bean curd;there were significant negative correlation between chlorine in the soybean and the adhesiveness of dried bean curd,and very significant positive correlation between chlorine and the stretch;there were significant negative correlation between calcium and the shear of dried bean curd.There were no significant correlation between mineral composition in the dried bean curd and the moisture of dried bean curd;there were very significant positive correlation between magnesium in the dried bean curd and the adhesiveness and shear of dried bean curd,and significant positive correlation between magnesium and springiness and resilience;there were significant negative correlation between chlorine and the adhesiveness of dried bean curd,and significant positive correlation between chlorine and cohesiveness,gumminess and chewiness,and these results showed that magnesium and chlorine had greater impact on the quality of dried bean curd;there were significant negative correlation between phosphorus and the springiness of dried bean curd;there were significant negative correlation between copper and manganese and the stretch of dried bean curd;there were very significant negative correlation between zinc and the stretch of dried bean curd.There were significant negative correlation between iron and calcium in the production water and the moisture of dried bean curd;iron in the production water had greater impact on the quality of dried bean curd,because that there were very significant positive correlation between iron and springiness,cohesiveness,gumminess,chewiness and resilience,shear;calcium in the production water also had greater impact on the quality of dried bean curd,because that there were significant positive correlation between calcium and springiness,cohesiveness and resilience;in addition,there were significant positive correlation between manganese and stretch,and significant negative correlation between zinc and adhesiveness,and significant negative correlation between magnesium and stretch of dried bean curd.These conclusions provided theoretical basis for producing dried bean curd of high quality,and could improve the quality of dried bean curd by adding the right amount of mineral composition which had impact on corresponding indicators in the situation which other raw materials of production were same.
