Lecithin is a kind of significant Phosphorus material existing in animal and plants.It also has many good physiological features,such as resisting oxidation,enhancing brain activity,and reducing blood lipid;It is widely used in the food,cosmetics and medicine and other fields.The main source of lecithin is soybean and egg yolk.The study of lecithin in soybean is more than that in egg yolk,but lecithin content in egg yolk is high and its functions is better than that of soybean lecithin.Therefore,it is very important for the extraction of lecithin in egg yolk and the research and development of its functions.Therefore,this paper extracts lecithin in egg yolk through the optimization assisted by response surface methodology,analyzes the nature of the obtained lecithin,and preparing the nanoemulsion by lecithin,which can provide certain references value for the extraction and utilization of lecithin in egg yolk.The main consequences are following:The best liquid ratio to extract lecithin in egg yolk is ultrasonic assisted,which the ratio soild:liquid is 15 ml/g,ethanol concentration is 92%,extraction time is 22 min,the actual measurement of lecithin is 375.69 mg/g,and the relative error is 0.73%.The main influences for the extraction of lecithin is ethanol concentration.The following is the time of extraction,then the soild:liquid ratio a little.The qualitative analysis of lecithin adopted respectively TLC and IR spectra,and the results showed that extracts was lecithin.It measured fatty acid composition of lecithin by GC-MS.The main composition is oleic acid,linoleic acid,stearic acid and palmitic acid;Light and temperature exerts certain influences on the stability of lecithin.Egg lecithin had better anti-oxidative capability.The best concentrations of lecithin and chitosan is 25 mg/ml and 0.1 mg/ml in preparing the nanoemulsion.The particle size of nanoemulsion is 146.7 nm,polydispersity indexis 0.264,and zeta potential is 50mV,which denotes nanoemulsion is an ideal carrier.The FT-IR showed that there is ionization reaction between lecithin and chitosan.The nanoemulsion is spherical by using TEM.And it also illustrated that nanoemulsion contain in fat soluble active ingredients or drugs through the case of astaxanthin.
