The aqueous phase that rose gained by steam distillation is Rose hydrolat,it is composed of pure natural,smelled fresh and with the effect of antibacterial anti-inflammatory.It is also a select aromatic material for cosmetics,beverage,insect repellent and antibacterial anti-inflammatory preparation.The structure,content,sensory threshold and the ratio between the compounds of the aroma components together provide special flavor and the biological activity to Rose hydrolat,which is an important indicator of its quality.Therefore,the research on the aroma components and antibacterial activity of Rose hydrolat has a great significance to the production,application and development of new products.The experiment is based on Rose hydrolat as the research object.And the conditions of enrichment,separation and identification of aroma components were systematically investigated and optimized.Finally,a method of analysis and evaluation the aroma components on Rose hydrolat was established by head space solid phase micro-extraction gas chromate-graphy olfactometry mass spectrometry(HS-SPME-GC-O-MS).Besides,the antibacterial effects were preliminary discussed.The specific research contents and results are as follows:1.An analysis method of aroma components on Rose hydrolat was established.The conditions of enrichment,separation and identification on aroma components were systematically investigated and optimized,so a method for the analysis of aroma components in Rose hydrolat by HS-SPME-GC-O-MS was established through 50/30 ?m divinylbenzene /carboxen/polydimethylsiloxane(DVB/CAR/PDMS)solid phase micro extraction,Rtx-Wax column separation and mass spectrometry identified.The results showed that a total of 92 compounds were isolated,and the structure of 73 in them was identified,accounting for 98.77% of the total volatile substances.2.The characteristic aroma components of Rose hydrolat were analyzed and evaluated.The contribution of the main components to the overall aroma of rose hydrolat was evaluated by odor activity value(OAV)combined with aroma intensity value,and the aroma of rose hydrolat was compared with rose flowers and rose essential oil residue.The analysis shows that the characteristic aroma components of rose hydrolat is rose oxide,linalool,citronellol,phenethyl acetate,damascenone,?-phenylethanol,methyleugenol,eugenol,they have a greater contribution to the overall aroma.Rose hydrolat can better reflect the aroma characteristics of purple roses,is a kind of inexpensive fragrant plant.3.A preliminary disscussion on antibacterial activity of Rose hydrolat.The research investigated the antibacterial activity of rose hydrolat on 3 kinds of bacteria(Staphylococcus aureus,Escherichia coli,Bacillus subtilis)and Aspergillus flavus,and studied the correlation between the content of the main components and the antibacterial rates.The result indicated that Rose hydrolat had a certain inhibitory impact on the 3 kinds of bacteria,and the inhibitory consequence was from large to small followed by Staphylococcus aureus > Escherichia coli > Bacillus subtilis,while less obvious on Aspergillus flavus.The highest content of ?-phenylethanol was found in the Rose hydrolat,combined with the correlation results showed that ?-phenylethanol was the main antibacterial substances in Rose hydrolat.
