Benzo(a)pyrene(BaP)exists widely in the industrial sewage of coal tar and oil refining, using too much of the high temperature of vegetable oil, burning food and fried food will also contain benzo(a)pyrene.Benzene(a)pyrene in China's limited standard is that edible vegetable oil products are below 10 ?g / kg.At present, the most widely used method for the determination of benzo(a)pyrene in food were high performance liquid chromatography(HPLC),gas chromatography-mass spectrometry(GC-MS)and enzyme-linked immunosorbent assay method. The above methods have their advantages, but there are some shortcomings, such as the sample pretreatment was more complex, resulting in long time-consuming detection, low efficiency, still cannot meet the real-time,in situ detection requirements. It has been found that if the object is adsorbed on the surface of coarse metal such as gold, silver and copper, the intensity of the scattered signal will be significantly increased by 10^6 to 10^9 times, which is called surface-enhanced Raman scattering, and the corresponding spectrum is called Surface Enhanced Raman Spectroscopy(SERS).SERS technique not only has the most advantages of Raman spectroscopy, can provide more abundant chemical molecular structure information, which can realize real-time and in situ detection, and high sensitivity, simple data processing, high accuracy,is a very powerful trace detection tools. The rapid detection method of Benzo(a)pyrene by SERS was studied in this paper, and good results were gotten.Benzo(a)pyrene molecules do not contain functional groups that are coordinated or bonded to metals,so it is difficult to detect them directly with SERS technology. In this study,we try to prepare nano-gold modified amino-modified silanization support material, which is used as the active substrate of surface-enhanced Raman spectroscopy to study the rapid detection of benzo(a)pyrene in edible oil.It is proved that nano-gold modified amino-modified silanized support is technically feasible, and the prepared new material has high SERS activity and good stability(remaining activity more than 100d).The new SERS substrate was applied to the detection of benzo(a)pyrene by Raman spectroscopy. The detection limit of benzo(a)pyrene was 5.6?g / L and the lower limit of quantification was 18.8?g / L.The benzo(a)pyrene of edible oils were detected by SRES method at the level of 10 ?g / kg,and the RSD of detection was 10-18%,and the recovery rate of benzo(a)pyrene were 93.2-125.7%.Compared with the traditional gas chromatography-mass spectrometry or high performance liquid chromatography,SERS method for the detection of benzo(a)pyrene had some unique advantages:(1)the detection of Benzo [a] pyrene by SERS method can be carried out on-site using a portable Raman spectrometer;(2)the test time of the SERS method was short, generally of seconds to one or two minutes. The SERS method provides a new option for rapid screening of benzo(a)pyrene in edible oils in the case of the detecting sensitivity fulfilled requirements.
