Phaseolus Radiatus hull refers to the hull down after rubbing the socked Phaseolus Radiatus,traditional Chinese medicine called Phaseolus Radiatus coat.Phaseolus Radiatus hull is rich in a variety of bioactive substances,at present,mostly as waste or feed and waste of resources.The content of dietary fiber in Phaseolus Radiatus hull was as high as 60%,and the soluble dietary fiber has many physiological functions,such as lowering blood fat and cholesterol,lowering blood sugar and preventing tumor.In this paper,Phaseolus Radiatus hull as the research object,based on the composition of the dietary fiber of Phaseolus Radiatus hull nutrition and in mung bean on the superfine grinding technology of extracting soluble dietary fiber from Phaseolus Radiatus hull with enzyme method,and study its properties,in order to provide scientific and theoretical basis for the development and utilization of resources of Phaseolus Radiatus hull.The main research contents and conclusions are as follows:To determine the general nutritional composition of Phaseolus Radiatus hull,the result is: The contents of water,ash,protein,fat and starch from Phaseolus Radiatus hull used in this experiment were 11.45%,1.22%,9.60%,0.23%,and 4.31%,respectively.The content of fiber from Phaseolus Radiatus hull was determined by Southgate method.The results showed that the content of dietary fiber in Phaseolus Radiatus hull was 63.54%,the contents of cellulose and lignin were 31.76%,14.13% and the soluble non digestible polysaccharides and insoluble non cellulosic polysaccharides were 8.83% and 8.82%,respectively.Extraction of soluble dietary fiber from Phaseolus Radiatus hull is Superfine Grinding-assisted enzymatic.On the basis of single factor experiment,the two general rotation combination design was used to optimize,the optimum technological conditions for extracting soluble dietary fiber from Phaseolus Radiatus hull by ultrafine grinding were obtained: The particle size of the powder was 400 mesh,the ratio of liquid to material was 33 mL/g,the enzymolysis temperature was 60 ?,the ratio of enzyme to substrate was 190 U/g,and the enzymolysis time was 2 hour.Under these conditions,the extraction rate of soluble dietary fiber could run up to 14.02%.Study on the properties of soluble dietary fiber from Phaseolus Radiatus hull.The results showed that,the soluble dietary fiber of Phaseolus Radiatus hull holding capacity,swelling capacity and oil holding capacity respectively were 389%,142% and 2.67 m L/g;Phaseolus Radiatus hull soluble dietary fiber in vitro adsorption of sodium cholate rate reached 30.29%;that of in vitro antioxidant experiment,soluble dietary fiber in the concentration of 4mg/m L,reducing power was 0.845 to DPPH free radicals and hydroxyl radicals showed strong scavenging rate were 82.65% and 85.16%.Antioxidation in vivo experimental results show that compared with the model group,total protein content,each dose group of mice serum and liver tissue T-AOC,TSOD,CAT,GSH-PX activity showed a correlation between the dosage of soluble dietary fiber can effectively improve the content of total protein,serum and liver tissue of mice decreased the content of MDA.High dose of soluble dietary fiber can significantly improve the mouse serum and liver T-AOC,T-SOD,CAT,GSH-PX activity.
