Docosahexaenoic acid is easily oxidized and insoluble in water.Using suitable wall material to prepare microcapsule can avoid the influence of environmental factors and conceal some bad flavor and color.At present,special medical formula food products are few that aim to cure the food protein allergy crowd,it has a significant economic significance to early develop suitable products for the crowd.According to the laws and regulations of special medicine formula food,design formula,vacuum cryogenic continuous drying method was adopted to develop docosahexaenoic acid microcapsule.In this paper,firstly,10% of docosahexaenoic acid powder is selected as raw material,and and the optimum process parameters of docosahexaenoic acid microcapsule is prepared by vacuum cryogenic continuous dryer from three aspects: track transmission speed and 1,2 segment temperature.By analyzing the particle size distribution,stability and viscosity of the emulsion,the surface oil and OXI data of the microcapsules,the best formulation of the microcapsule is determined to be 11% of docosahexaenoic acid content.Through sensory evaluation experiment,comparing and analyzing the sensory level of similar products sold in the market,it was found that the sensory quality of docosahexaenoic acid microcapsules is better than the sensory level of similar products,which promoted the improvement and development of the process.By using the accelerated test,the oxidation stability test is conducted for the preparation of docosahexaenoic acid microcapsule and market-like docosahexaenoic acid microcapsule products,and the results showed that the stability of the product is better than that of the same kind of product.
