The larimichthys crocea,also known as the yellow croaker,is one of the most tender and nutritious food fish.However,if it is handled improperly during the frozen storage process,the protein is prone to freeze denaturation,resulting in a decline in the quality of the fish meat,so that after thawing,it is spoiled and becomes inedible,resulting in greater economic losses.Therefore,the effects of antifreeze agents on the antifreeze denaturation and water holding capacity of larimichthys crocea were studied in this paper,to provide theoretical support for delaying the decline in the quality of larimichthys crocea,maintaining maximum food value,and extending the shelf life of larimichthys crocea,the research results show that:?1?To study the changing rules of related indicators in the process of frozen storage of larimichthys crocea treated with different ratios of mixed antifreeze?trehalose,sorbitol,and sodium citrate?.The results show:Three different combinations(100 mL of 10%?W/V?trehalose,100 mL mass ratio of 1:1 10%?w/v?sorbitol and sodium citrate,the 100 mL compound antifreeze with 10:1?W/V?trehalose,sorbitol,and sodium citrate with a mass ratio of 1:1:1 can all reduce the hardness,water holding capacity and salt soluble content of the larimichthys crocea,Ca2+-ATPase activity,active thiol content,and total sulfhydryl content decreased.Inhibition of surface hydrophobicity,combined with SDS-PAGE gel electrophoresis and electronic nose PCA analysis,the results showed that the composite antifreeze?100 mL mass ratio of 1:1:1 10%?W/V?trehalose,sorbitol,and sodium citrate?treatment group could inhibit the degradation and protein degeneration of larimichthys crocea and reduce the volatile flavor of fish flavor.?2?To study the effects of complex antifreeze on the factors of frozen denaturation of larimichthys crocea,combining multivariate statistical analysis?PCA,correlation analysis and path analysis?,the results show:There was a positive correlation between hardness,salt soluble protein content,myogenin Ca2+-ATPase activity,active thiol content,total active sulfhydryl content,and water holding capacity,and a negative correlation with surface hydrophobicity in the complex antifreeze treatment.The water retention index is a key factor in the frozen denaturation of larimichthys crocea.The activity of myoglobin Ca2+-ATPase and hardness have a greater positive effect on the water holding capacity,and the surface hydrophobicity has a negative effect on the water holding capacity,active sulfhydryl groups,active total sulfhydryl groups,and salt-soluble proteins have less related effects on water retention.?3?To study the effects of combined antifreeze treatment on the water holding capacity of frozen larimichthys crocea.The results show:Compound antifreeze treatment significantly slowed the decline in the water holding capacity of the larimichthys crocea,and it also had a significant effect on maintaining the texture characteristics of the larimichthys crocea.Optimized box-Bchnken test design resulted in 3.25%trehalose,2.08%sorbitol,and 0.25%sodium citrate in the composite antifreeze treatment group?optimal group?.The resulting larimichthys crocea had the best water holding capacity after frozen storage.The texture parameter has the smallest change.At the same time,analysis by scanning electron microscopy showed that:After treatment with the optimal antifreeze compound,the damage of the muscle fiber structure of the larimichthys crocea decreased significantly,its tissue damage was effectively suppressed,and the degree of protein freezing and degeneration was protected.
