China is a big producer,importer and exporter of aquatic products in the world.The import and export volume of aquatic products stands first on the list of agricultural commodities exporting.Aquatic products has became people's major food source for its rich nutrients and delicious taste.Therefore,in order to make sure the safety of aquatic products and promote the sustainable development,making risk evaluation in this field become more and more vital.Scientists in our country have made the research into risk evaluation of kinds aquatic products according to the procedures of quality safty risk evaluation.This article take aquatic products as major research object,it makes security risk assessment for humans of heavy metal accumulation and banned substance vestigital,aiming at providing new ways and scientific and reliable basis for further improving management level of security risk of regional aquatic products quality.Making acceptable daily intake(DI)as evaluation index,the risk assessment of four heavy metals found that the DI of mercury is between 0.0007-0.0033mg/d,which is all far less than the tolerable daily intake(TDI)of mercury,the DI of cadmium is between 0.0022-0.0265mg/d,which is all far less than the TDI of cadmium,the DI of arsenic is between 0.0005-0.0682mg/d,which is all far less than the TDI of arsenic,the DI of lead is between 0.0022-0.0281mg/d,which is all far less than the TDI of lead.This is enough to demonstrate the probability of risk existence is relatively low.Making health risk as evaluation index(RI),the risk assessment of four heavy metals found that the RI of mercury is between 0.25-1.83,the RI of cadmium is between 1.23-14.73,the RI of arsenic is between 1.51-37.90,the RI of lead is between 1.21-15.63.The RI of the four heavy metals is possible to be over 1,which demonstrates health risk is existing and in some period exist high risk.Making exposure limit(MOE)as valuation index,evaluate the risk of malachite green and nitrofuran medicines,which found that the MOE of malachite green is between 90 000-23 000 000 and the MOE of nitrofuran is between 100 000-4 000 000,which are all over 10000,this show the probability of risk existence is relatively low.But considering from the point of hereditary cancerogen,we cannot treat it lightly and shouldn't have fluke mind.Only zero dosage leads to zero risk,as there exsist risk probability of untoward effection under any dosage.
