This paper studied the effects of mulching,corn mulching,non-coverage,planting density,and storage time on the processing quality of potato tubers.The main cultivar“Longshu No.7”in Gansu production area was used as the test material to determine the main components such as dry matter,starch,reducing sugar and protein in potato tubers,browning degree,transparency,solubility,swelling degree,texture characteristics,etc.The main indicators of processing,and the changes in related enzymes during storage,compared the effects of different planting treatments,different planting densities and their storage time on potato yield and processing quality.The results of the study are as follows:(1)Comparison of different cover plantings revealed that the dry matter content(28.96%),starch content(22.6%),reducing sugar content(0.209%)and hardness(6992.67g)of potato tubers planted with corn stover were significantly higher than those of other cover plants.Planting was 5.18%,4.41%,0.123%,and 3682g higher than that of the control(without exposing the open field).The protein content of the corn stalk covered with furrows was the highest(4.44%),1.56%higher than the control.The tuber browning intensity of potato was significantly related to the time of contact with air.The smaller the L~*value,the higher the degree of browning,while the browning degree of the control and corn stalks was greatly changed,and the L~*value was lower.Full coverage of corn stalks.(2)The texture characteristics of potato tubers were best when the strips of corn stover were planted flatly.Corn starch strip coating and corn stalk full coverage of potato starch had the highest solubility and best transparency,and corn straw ridge and furrow covered potato starch had the largest degree of swelling.Covering planting patterns had no effect on the particle morphology and crystal form of potato starch.(3)Different planting densities can affect potato processing quality.At 3500plantings/mu,the tuber’s dry matter,starch,protein content and hardness are significantly higher than other planting densities.The solubility and transparency of potato starch are also significantly better than other plantings.Density;4500 strains/mu planting tuber the highest reducing sugar content,starch swelling is best.Planting density has an influence on the particle size of potato starch,but has no effect on the morphology and crystallinity.(4)During storage,the dry matter and starch content of potato tubers in all three planting methods showed a“decline-rise-decrease”trend,while the reducing sugar content was significantly negatively correlated with it.The change trends of amylase and starch phosphorylase are also similar;the change of protein is not great;the degree of browning is consistent with the change of PPO activity;the content of amylose is related to the activity of GBSS.(5)During the whole storage period,the characteristics of full coverage of corn stalks were superior to those in open field and black film cultivation.Straw mulching can significantly increase the content of main components of potato tubers,and shows better texture characteristics and starch transparency,swelling degree and solubility;potato tuber quality changes are relatively significant,while starch properties change little.
