With the development of China's economy,there are increasing numbers of"three high"symptoms.Among them,the population of hypertension is 160 million,and the dyslipidemia population is 160 million.It is the first"three high"and"chronic diseases"country in the world.The amount of people with hyperlipidemia,high blood pressure and excessive aging of the skin are increasing with the economy development and rapid pace of life.In recent years,researchers find that the polysaccharides,polyphenols and trace elements in fruit can assist in reducing blood lipids and resistant oxidation.Raspberry contains organic acids,flavonoids,ellagic acid,superoxide dismutase?SOD?and amino acids?especially human essential 8 amino acids?,anthocyanins,raspberry ketone and other nutrients.In this study,raspberry was fermented into healthy wine and its biological activity,such as antioxidant capacity and hypolipidemic activity were investigated.The results could resolve the difficulties in raspberry preservation and provide a basis for the development and utilization of raspberry in the future.The main contents were as follows:1.The fuzzy mathematics sensory evaluation method was used to study the raspberry wine.The optimum fermentation process of raspberry wine was that the fermentation temperature was 24°C,yeast inoculum was 0.6 g/L,and initial sugar was 22°Bx.2.The changes of alcohol accuracy,total sugar,total phenolics,total flavonoids and raspberry ketone in the main fermentation period were analyzed.The total sugar yeast consumption reduced the total sugar content;as the main fermentation,alcohol content,total phenol,total flavonoids,raspberry ketone content increased.The electronic nose technology combined with principal component analysis?PCA?and linear discriminant analysis?LDA?showed that the contribution rate of volatile substances in the main fermentation period was greater than 85%which indicated that the volatile compounds were distinguished during the main fermentation period?1d-8d?.3.The clarification and acid reduction process of raspberry wine were investigated.The optimal results of clarification process were gathered when the ratio of compound clarifier?chitosan:bentonite?was 3:1,water bath time was 35min,water bath temperature was 45?,and the transmittance rate of product was 91.26%.The optimal results of acid reduction process were collected when the temperature was 4?the acidity of the product was 6.313g/L,with sodium carbonate 3g/L,calcium carbonate 5g/L and potassium carbonate 0.8g/L as the acid reducing reagent.All indicators of the finished products were accord with the national standard.The main aroma components were ring butane?39.27%?,isocyanate?14.87%?,2-amino-2-methyl-1,3-propanediol?5.72%?and 2-methyl ethyl ester?1.54%?detected by GC-MS.4.The total antioxidant capacity,reducing power,scavenging capacity of DPPH,scavenging capacity of hydroxyl radical?OH?and scavenging capacity of superoxide anion free radical(O2-)of raspberry wine were studied,and compared with the in vitro antioxidant activity of"Beibinghong"wild grape wine.The results showed that the raspberry wine had a certain antioxidant capacity,especially for the DPPH radical scavenging activity,hydroxyl radical scavenging capacity?OH?,superoxide anion radical(O2-)ability,scavenging rates were 92.7%,82%,87.79%,respectively,which was higher than"Beibinghong"wild grape wine.5.The lipid lowering activity of raspberry wine was studied.The body weight and kit of SD rats were used to determine triglyceride?TG?,total cholesterol?TC?,high-density lipoprotein cholesterol?HDL-C?and low density lipoprotein cholesterol?LDL-C?in animal experimen.The results showed that the difference of middle dose?0.38g/kg?raspberry wine and low dose?0.19g/kg?group was not significant.Comparing the result of0.76g/kg of high dose group and model group showed significant difference?P<0.05?,effectively inhibiting the fat-gain of rats,and significantly reducing the indexes of serum in hyperlipidemia rats.The results showed that the raspberry wine could aid to reduce the blood lipid.
