On the one hand,in recent years,our country's deep-sea fishing vessels has significantly increased level no matter in the aspect of ship performance or capture capability. On the other hand, deep-sea fishing vessels is hindered by low efficiency and low environment of traditional refrigeration system. A large amount of date of foreign fishing vessel refrigeration system shows that it is entirely feasible to use ammonia on the fishing vessel as the refrigerating medium. The latest version of domestic norms and regulations also passed the protocol of the measures of safe use of ammonia as the refrigerating medium, reducing the usage restriction on domestic fishing vessel. On that basis,how to apply ammonia as the refrigerating medium to fishing vessel safety and reason plays an important role in development of our country's fishing vessel.In this paper,24 multi-function deep sea fishing vessels delivered by Jinglu Ship industry is the main study object. It is analyzing all kinds of significant difficulties of refrigeration system in which using ammonia as the refrigerating medium,and also giving a detailed introduction of convention adaptability, feasibility, efficiency and the stability of frozen quality research that based on ammonia as the refrigerating medium, and the research of refrigeration system device?tubular?freezing room arrangement of ammonia refrigerating medium.In this paper, it is firstly comparison analyzing the ammonia refrigerating medium's usage requirement and restricted condition in domestic and overseas' classification and international environmental protection organization, illustrating the convention adaptability and feasibility. By comparison the advantages and disadvantages of direct evaporation refrigeration system and Ammonia pump to supply fluid system to determine the refrigerating method. Determining the suitable ammonia refrigeration system and selecting the main refrigeration equipment according to the operation characteristics and refrigeration requirement of deep sea fishing vessel. In this paper we make arrangement of frozen room from the cabin arrangement equipment selection and insulation treatment etc in order to guarantee the reasonable design of ammonia refrigerating. It is strongly proved the advantages and disadvantages of ammonia as the alternative refrigerating medium by comparing the ammonia and Freon as the refrigerating medium in every aspects. Measuring the saury and squid's core temperature variation, calculating the frozen dynamic mechanics parameters,analyzing change rule of saury and squid's sense?protein?lipid and the form of organization in the process of frozen storage, analyzing the influence on the quality of fishing harvesting on the different frozen condition(temperature).
