Research On Lipoxygenase Activity And Some Quality Traits In Common Wheat

LOX is one of important factors to influence the storage stability , colour of wheat and its products. High LOX activity could increase the flour whiteness, but too high activity will led to the loss of nutrition. Low LOX activity can extend the preservation time of wheat and its products, and reduce the loss of nutrition. This article selected 130 wheat varieties resources which harvested respectively in 2015 and 2016 to contrast the LOX activities, and analyzed the change rules, then discussed the distribution trend of LOX activities about different regions wheat varieties. The LOX activities’ change trend of 70 wheat varieties from anhui regional experiment which harvested in 2016 have been analyzed. The whole mills’ LOX activity,carotenoids content, White parameters and RVA parameters from above two wheat materials have been determined to research the relationship of these quality traits. The main research results were as follow:1.During the two years experiment about 130 wheat varieties’ LOX activities ,LOX activities had significant correlation with years,varieties,the interaction between years and varieties, and OXZ activities in different years had significant positive correlation. The change range of LOX activities in 2014-2015 was 5.60nkat.g-1~34.80nkat.g-1, the mean was 16.49nkat.g-1. The LOX activities’ change range was 2.25nkat.g-1 ~13.40nkat.g-1 in 2015-2016,and the mean was 7.90nkat.g-1. The mean and change range of 2015 were bigger than of 2016. But the correlation analysis showed that the total change ranges between two years were identical, which explained LOX activity was mainly controlled by genes. On the other hand ,we cannot ignore the environment’ influences.2.130 wheat varieties resources were from Su Wan and Yangtze Rive、Yu Lu and North areas. Anhui province,Jiangsu province,Henan province,Shangdong province were main areas. Ranking the average of provinces’ LOX activities from big to small ,the result was Anhui,Jiangsu,Hubei,Sichuan in Su Wan and Yangtze Rive. In Yu Lu and North areas, the result of ranking LOX activities’ average value was Henan,Shanxi,Shangdong,Hebei,Beijing. Due to the different numbers of provinces’ wheat varieties and roughly division of wheat origin areas, the analysis results only as reference.3、Combine with LOX activities and clustering analysis, 8 wheat varieties with high LOX activity(≥18.81nkat.g-1) and 5 low LOX activity(≤6,80nkat.g-1 ) wheat varieties had been screened out in 5% proportion. 8 high activity varieties contained zhengyu9987,wanmai48,annongluo 1,fumai936,wanmai47,wanmai52,wanmai38-96,China Spring. 5 low activity varieties contained yannong23,yumai70-36,annong9403,xiaoyan6,tainong18. Those high or low LOX activities wheat varieties could provide resource materials for wheat quality improvement and parents choose.4.The correlation analysis showed that LOX activity with carotenoids content,white, yellow,RVA parameters mostly identical to correlation between 130 wheat varieties and 70 anhui regional experiment wheat varieties. These two materials respectively showed that the LOX activity was high negatively correlated with the carotenoids content,yellow and red of the whole mills, high positively correlated with the whole mills’ white, and a certain degree in correlation with part of RVA parameters . In conclusion, LOX activity had impacts on starch quality traits of wheat.5.During three months of storage, 70 wheat varieties from anhui regional experiment had showed that LOX activities and carotenoids contents had declined with storage time lasted. The LOX activity had declined with 0.38nkat.g-1 per month ,the carotenoids content had declined with 0.17mg.Kg-1 per month. The reason of declining needs further exploration.
