Food is the first necessity of the people. As a populous country with a long history, China has a very long history and a rich culture in catering industry and it owns the largest market and development potential. However, for several years of the reform and opening up, Western fast food has almost dominated China catering industry. Its market share is increasing and the turnover is surprisingly huge while there is not any powerful enough brand of localized catering industry in China till today. The business model of franchise chain is the most dynamic and most growth potential model of today's commercial activities and the key to make KFC, Mcdonald's, even Little Sheep and Kung Fu become leading enterprises. As one of the catering projects which are easy to be standardized and operated by chain, hot pot industry is selectively analyzed in this paper.Business Process Reengineering is a kind of business management idea originating from America in the early 1980s. It's a kind of management theory and idea developed by main American industrial enterprises after their comprehensive learning of the outstanding management experience of Japanese manufacturing industry, which fully reforms the operation management of enterprises and improves their overall competitiveness.The vitality of process reengineering lies in its combination with the strategic targets of enterprise operation. It reforms for the adaptation to the change of "3C" instead of just for a little cost reduction or performance improvement. This reengineering project focuses on reengineering on strategic level, which includes the choice of operation model, the reengineering of organization structure, the transformation of human resource system and the remodeling of enterprise culture. The target of reengineering is to have the performance of enterprise prominently improved on strategic level.Firstly, importing the concept of process reengineering, this paper describes and analyzes the current situation of the theory at home and abroad and then discusses its connotation to lay a theoretical foundation for the paper. Secondly, combining with the situation, management dilemma and requirement of A Hot Spot chains, this paper uses the theories of management, strategic management and process reengineering to systematically discuss the strategies, principles and the procedures of Business Process Reengineering and then to put forward operable improvement measures and expected effect. Finally, it evaluates the effect of Business Process Reengineering and adhere to continuous improvement philosophy, applied in enterprises to largely improve the enterprise performance and achieve the strategic target gradually.
