Food safety is the foundation of human health and life. With pursuing high quality life, people no longer concern about eating fully but prefer to focus on food quality and safety issues. With the improvement of the national economy, the food industry has been developing rapidly, carrying increasing types of food and endless food safety issues meanwhile. Food safety issues that affect the health and safety of the residents affect sound economic development and social stability; also affect the government and the country's image. As food safety supervision is weak in rural areas and food security accidents occur frequently, the studies of the rural residents'cognition on food safety and their consumer behavior have practical meaning for conducting work in rural area.In this paper,332 rural residents in four major agricultural counties in Jinzhong City were surveyed. Though questionnaire, descriptive statistics, regression analysis and other methods, this paper studies about the factors influencing the cognition of food safety and food purchases behavior in rural area. The main contents include:sample characteristics, Knowledge about food safety in rural area, rural residents'food consumption behavior, empirical analysis of cognitive factors on food safety in rural area and empirical Analysis of factors influencing purchasing behavior.The results showed that:(1) Rural residents concerned little about food safety, which influenced by their occupation, monthly income and other factors; (2) The awareness of their rights on food safety is weak in rural area, especially the cognition of laws and regulations about food safety; (3) Rural residents were not satisfied with food safety regulation; (4) The rural residents' food consumption behavior influenced by the awareness of food safety and income levels.Policy suggestions based on the conclusions:(1) Strengthen publicity of food safety to improve rural residents' awareness of food safety; (2) Spread common sense of food safety and speed up the construction of food safety information system; (3) Improve rural food consumer market and the environment; (4) Establish efficient food safety complaints mechanism; (5) Strengthen food safety supervision.
