The strain XT 11 produces Xanthan-liquefying Enzyme that can degrade xanthan to oligosaccharide.The Xanthan-liquefying Enzyme was characterized after partial purification.The optimum reaction temperature is 40?,the optimum reaction pH is 6.0.And the Km,is 1.68,the Vmax is 20.37.The sensitivity of the enzyme to the temperature and the pH was examined.When the enzyme is kept at 30? for 3h,the activity of the enzyme will be destroyed.And when it is put in the 40? for 5min,the activity will be destroyed.Xanthan-liquefying Enzyme was purified by DEAE-Sephadex A25 and CM-Cellulose22.And the result was identified through SDS-PAGE.
