| Wheat seedling is rich in a lot of nutrition.But there are very few industrial processed products making from this green plant.Use the Tender wheat seedling as the material,through the color protection and the spray drying as method to process wheat seedling instant solid beverage and optimization formulation,Determination of the content of antioxidant activities and removal of hydroxyl free radicals(·OH),superoxide anion free radical(O2--·)scavenging ability and reducing power,DPPH-free radical.This can provide technical support for the manufacturing of wheat seedling instant solid beverage.The product of wheat seedling instant solid beverage.Rich and solid beverage category.These subject main aspects and the results were represented as follows:1.Color protection of wheat seedling.Focusing on analysis of color protection conditions,such as blanching temperature,blanching time,ascorbic acid,citric acid and sodium chloride on the color protection of wheat seedling.Single factor test results shows the final concentration of 0.05%ascorbic acid and blanching time for 4min wheat seedling color protection effect,and the former retaining color better;color protection effect of blanching temperature on wheat seedling is weakened as the temperature increased;citric acid and sodium chloride on wheat seedling color protection.The orthogonal experiment results show that:Compound Reagent concentration of 0.03%citric acid,0.07%ascorbic acid and 1.5%sodium chloride,blanching 6min at 75℃,the effect of color protection.2.Spray drying technology of wheat seedling powder.Through the single factor and L9(34)orthogonal experiment,content of water and spray drying effect as indexes.Tne spray drying technology was studied.Single factor test results indcatied that control solid-liquid ratio of 1:5 g/mL,feed flow rate of 260 mL/h,choosing inlet temperature of 180 ℃,confusing wheat flour moisture content is 3.70%,not sticky wall,no drops;Control solid-liquid ratio of 1:5 g/mL,inlet temperature of 180 ℃,choosing feed flow rate of 260 mL/h,confusing wheat flour moisture content is 4.79%.not sticky,no drops;control of feed flow rate of 260 mL/h,inlet temperature of 180 ℃,select solid-liquid ratio of 1:5 g/mL,confusing wheat flour moisture content is 4.13%,not sticky,no drops.The optimum conditions of spray drying of the high-quality wheat seedling powder has been defined as follows:at inlet temperature of 180℃,feed flow rate of 260 mL/h,and solid-liquid ratio of 1:6 g/mL.3.formula of the wheat seedling instant solid beverage was opti1zied.Use U9(96)uniform design,secondly,the best formula of wheat seedling instant solid beverage is:5.50 g sugar,citric acid is 0.01 g and 0.80 g of the malt dextrin,confusing wheat powder 0.05 g,D-ascorbic acid,0.001 g,100 mL warm water drinking.4.Antioxidant activities in vitro of wheat seedling instant solid beverage were analyzed by the ultraviolet spectrophotometry(UV)and the high performance liquid chromatography(HPLC),results show that the product contained 0.240%of polyphenols,0.036%of flavonoids and 0.040 mg/g of ferulic acid.Secondly,studied the wheat seedling instant solid beverage of the invitro antioxidant ability,including removal of hydroxyl free radicals(·OH),superoxide anion free radical(O2-·)scavenging ability and reducing power,DPPH·free radical.Research results show that the difference with the wheat seedling instant solid beverage of hydroxyl free radicals(·OH),superoxide anion free radical(O2-·)and DPPH-free radical removal ability respectively,30.00%,75.25%,52.10%,compared with similar products on the market,the hydroxyl free radicals(-OH)removal ability order:Sour plum juice solid beverage>green tea solid drink>wheat seedling instant solid beverage>cocoa instant solid beverage>papaya instant solid beverage;On superoxide anion free radical(O2-·)scavenging ability order:Sour plum juice solid beverage>green tea solid drink>wheat seedling instant solid beverage>papaya instant solid beverage>cocoa instant solid beverage;DPPH·free radical removal ability order:cocoa instant solid beverage>green tea solid drink>papaya instant solid beverage>wheat seedling instant solid beverage>Sour plum juice solid beverage.Comprehensive analysis of the wheat seedling instant solid beverage has antioxidant ability in vitro and the development prospect. |
