Congou black tea is one of the four types of tea in China.Fermentation is the most important process in processing black tea,which is responsible for its distinction and flavor characteristics.People,both on domestic and foreign,rely on human's experience "to evaluate and make tea",because of the lack of special fermentation equipment,with the principles of tea production process,and the scientific evaluation methods,with fermentation quality of objective,quantitative and effective.Therefore,it is important to research the intelligent sensing technology of the new fermentation equipment and the quality of fermentation.Based on the principle of fermentation and technology characteristics of the process,this paper has designed a drum-type black the oxygen-rich fermentation with tumble and stirring function as a platform for the experiment of Congou black tea fermentation.Furthermore,the computer numerical simulation(CFD)technique is used to optimize the structural parameters such as aperture,hole and intake angle of the fermentation cylinder.Aiming at the shortcomings of artificial sensory evaluation and testing of physical and chemical,this paper has carried out the research on the intelligent sensing technology of black tea fermentation quality based on machine vision and nonlinear algorithm,and explores the integrated application technology of Congou black tea automatic production line.The conclusion of the study provides effective technical ways and new ideas for the development of technical equipment and special quality monitoring equipment for specific tea and tea processing technology equipment,and helps the "13th Five-Year Plan" national tea industry technology and equipment upgrading and "machine substitution" national strategy implementation,with its important significance.
