As a functional food,fish oil has great market value in the food industry.Its application is greatly restricted due to its oxidation and deterioration.Microcapsule technique is used with fish oil.In the external of fish oil,microcapsules form protective layer,improving the storage stability.As a kind of nutrition fortifier is added to the milk candy,increasing the nutritional value of milk candy.This paper choose EPA and DHA content of 81% triglyceride type fish oil as raw material and five kinds of embedding formula.Fish oil microcapsules is prepared by spray drying method,studying its properties,microstructure,thermal stability and storage stability,choosing an optimal embedding formula,applying it to the milk candy,designing the annual output of 625 t fish oil milk candy factory.The properties of microencapsulated fish oil show that the moisture content,surface oil content and peroxide value of the samples all reach the standard SC/T 3505-2006.The embedding rate is above 98%.The particles are milky white,uniform size,good dispersibility and high solubility.The results of TG and DSC show that the thermal stability of the samples is better.The microstructure of microcapsule is observed and analyzed by SEM;the results show that most of the microcapsules produced by five kinds of wall materials don't have crack and hole.There are dents in some particles.Using 60? accelerated storage experiments to study the microcapsule products' stability;the results show that the oxidation stability of fish oil microcapsules prepared by octenyl succinic acid starch ester/polyglucose/propylene glycol alginate is the strongest.Comprehensive consideration.,the application of microencapsulated fish oil prepared by octenyl succinic acid starch ester/polyglucose/propylene glycol alginate is studied.The quality of fish oil milk candy is evaluated by texture,deformation,whiteness and sensory evaluation.Designed and optimized the formulation of the fish oil milk candy by single factor and orthogonal experiments.The results show that the best formula as follows: the content of gelatin is 7.0%,the content of agar is 0.5%,the content of microencapsulated fish oil is 3.0%,the content of whole milk powder is 17.5%,the propertion of L-arabinose in total sugar is 7.0%.According to the characteristics and production process requirements of fish oil milk candy products,this paper determines the production plan of products.The plant design of 625 t fish oil milk candy products is carried out from the general layout of the factory,workshop layout,equipment flow and pipeline layout of production workshop.Analyzing the economic benefit,the annual net profit of the factory is 1276.09 ten thousand RMB,and the annual rate of profit is 16.33%.
