Lactarius deliciosusis a valuable ectomycorrhizal mushroom.Lactarius deliciosushas a fresh flesh with rich nutritional value and unique taste.It can not only eaten but also medicinal.The fermentation medium and culture conditions of Lactobacillus polysaccharide were studied.First,the optimization of culture medium and culture conditions were optimized.Then,the Placket-Burman test was carried out on the basis of single factor.On the basis of Placket-Burman experiment,the response surface was tested,and the carbon source was obtained through the optimization of response surface.The yeast and pH in glucose and nitrogen sources are three main factors.When the amount of glucose was 21 g/L,the addition of yeast powder was 1.9 g/L and the initial pH was 7.1,the polysaccharide content of the response surface was 0.1659 g/L,the maximum response surface theory was 0.1702 g/L,which was 6% higher than that of the original 0.1564 g/LIn this paper,the extraction process of fungal polysaccharides was studied,and the fungal polysaccharides were extracted by hot water extraction.The heating time,extraction ratio,and ethanol concentration were studied by single factor experiments and response surface analysis experiments.The optimum extraction conditions for fungal polysaccharides were determined: heating time 5.1 h,extraction ratio 1:22,ethanol concentration 78%.On this condition,repeated experiments were conducted 3 times.The content of fungal polysaccharide was 0.1728g/L,which was 5% higher than the original 0.1659 g/L.The composition analysis of the bacterium powder was studied.Firstly,the mineral elements in the bacterium powder were analyzed,and iron,copper,zinc,manganese,and chromium were included as necessary elements for the human body.As many as 16 kinds of amino acids were detected,the total amino acid content was 8.86%,and the essential amino acid content in the human body was 3.26%.According to analysis by HPLC,the cytidine content in the powder of L.lactarius was 0.98 mg/g and adenosine was 1.5 mg/g.The total polyphenol content was 5.54 mg/g and the total triterpene content was 7.1 mg/g as measured by total polyphenols and total triterpenes.
