To explore the effect of baking technology on the quality of tobacco leaves with different aging time.In 2014,Miyi County,Panzhihua City,Sichuan Province,China studied the post-baking tobacco leaves at different critical temperature points under different temperature-controlled baking conditions;they were aged for 6 months,12 months,and 18 months respectively.Samples were taken at 24 months and 30 months to analyze the appearance quality,sensory evaluation quality and chemical composition of tobacco leaves.The main findings are as follows:(1)During the aging process,the contents of total sugar,reducing sugar,nicotine,total nitrogen and other chemical constituents in tobacco leaves basically declined with aging,and the potassium and chloride ions did not change significantly with aging time.The increase has increased,and the chemical composition has changed the most in the period from 0 to 18 months,and the change of the continuous aging tends to be gentle.(2)The appearance of the five treatments in the middle leaves during the aging process showed a trend of increasing first and then decreasing.The appearance quality score of the first leaf of flue-cured tobacco was T4> T2> T3> T1> CK,and the appearance quality score reached the highest at 18 months.At this time,the five treatment scores were T4> T2> T3> T1> CK.After that,it has been lowered to 30 months to reach the minimum.The appearance of five treatments in the upper leaves showed a trend of increasing first and then decreasing during the aging process.The appearance quality scores of flue-cured tobacco leaves were T2>T4>CK>T3>T1.As the aging time increased,the five treatment scores at the 18 th month were T4>T2>T3>CK>T1,T4 The appearance quality is best at 18 months.(3)The intrinsic quality of tobacco leaves is constantly changing under different temperature and humidity treatments under different temperature and humidity 33 treatments.The sensory quality scores of the first leaves of middle leaves are T4>T2>T1>CK>T3.As the aging time increases,In addition to the slow decline in sensory quality score of T4 treatment,the sensory quality scores of other treated tobaccos generally decreased first and then increased.At the 18 th month,the sensory quality scores reached the highest,and the sensory quality scores T2>T1>T4>CK>T3..This shows that the T4 treatment obtained in the five treatments had the best internal quality of the flue-cured tobacco leaves.After aging,the T2 treatment tobacco leaves had the best sensory evaluation quality.The sensory quality scores of the first leaves of the upper leaves were CK>T3>T2>T4>T1.With the increase of the aging time,the sensory quality scores of the treated tobaccos first decreased and then rose and then decreased.The sensory quality score T4> CK> T2> T1> T3.This shows that the roasted tobacco leaves obtained from the CK treatment in the five treatments have the best evaluation quality,and after aging,the T4 treated tobacco leaf has the best sensory evaluation quality.(4)The experimental study shows that proper temperature stabilization time and humidity conditions can improve the appearance and intrinsic quality of roasted tobacco leaves and improve the coordination of chemical composition of tobacco leaves.If the temperature at the critical temperature point is too long,it will lead to the excessive consumption of dry matter inside the tobacco leaf,which will be detrimental to the appearance and inherent quality of the tobacco leaf.Short warming time will affect the intrinsic and appearance quality of the leaf after baking.Through the detection and analysis of the appearance,sensory quality and chemical composition of the cured tobacco leaves after treatment,it was considered that the middle leaf of Yunyan 87 was treated with T4 in the baking process(the temperature of the dry bulb at the key temperature point was 38° C.and the temperature was stabilized for 30 h;Ball temperature 42°C,stable temperature 16h;45°C stable temperature 22h;54°C stable temperature 16h);its chemical composition,appearance quality and evaluation quality are best improved,T2 treatment of the upper leaves in the baking process(critical temperature point The dry bulb temperature is 38°C,and the temperature is stable for 24h;the dry bulb temperature is 42°C,the temperature is stable for 16h;the temperature is stable at 45°C for 18h;the temperature is stabilized at 54°C for 16h);the chemical composition,appearance quality and evaluation quality are the best.(5)The test results showed that the reduction of chemical composition of tobacco leaves at the early stage of aging had an effect on the quality of tobacco leaves.The later change of content was also conducive to the stability of tobacco quality.The comprehensive quality score reached 18 months.The highest score.The combination of different temperature stabilization time and humidity at the key point of intensive baking temperature had a certain effect on the chemical composition,appearance quality and sensory quality of the cured tobacco leaves.The treatment quality of T4 in the middle leaves was the best,but it was aged.T2 treatment had the best overall quality at 18 months,and T2 treatment had the best overall quality in the first leaves of the upper leaves.However,T4 treatment had the best overall quality when aged to 18 months,and tobacco was needed as a raw material for the cigarette industry.It is the tobacco leaf after aging,so in the actual production,the baking process cannot be selected according to the comprehensive quality of the first-baking tobacco leaves,and the baking process should be selected according to the integrated quality of the tobacco leaves after aging.
