| Abalone ready-to-eat products with the advantages of convenient transportation and long storage time have become the main processing and marketing method of abalone.The taste of ready-to-eat abalone product is mainly controlled by adding conditioning solution to cook it into flavor,and the effective monitoring of taste quality of conditioning solution is the key to the processing of instant abalone product.Abalone regulate the quality of the liquid has been dependent on human evaluation is given priority to,subject to evaluation personnel individual differences,subjective evaluation results of strong,repeatability is poor,lead to enterprise of abalone ready-to-eat products exist certain differences,impact on the consumer to the enterprise product quality,as a result,some abalone food processing enterprises to start college,scientific research institutions to jointly develop to assist or replace human of abalone regulate fluid taste quality testing of special equipment.The traditional physical and chemical taste detection technology mainly focuses on off-line detection in the laboratory.Artificial taste detection technology has the advantages of fast,real-time and intelligent detection of overall characteristics,and is widely used in the detection and quality discrimination of flavor substances solutions.In order to achieve in the process of production to regulate fluid taste quality testing,this paper studies the abalone regulate fluid properties,combined with abalone processing technology,developed sampling,filtering,cooling,liquid points,sampling,testing and cleaning process,such as abalone regulate fluid detection technology,abalone regulate liquid taste quality detection device is designed.The device is divided into three parts: mechanical structure design,electrical system software and hardware design,and establishment of taste quality discrimination model of abalone conditioning fluid.In the design of mechanical structure,the lifting mechanism and rotary mechanism are adopted to realize the automatic detection of regulating fluid and complete the design of device shell.In order to realize the detection of abalone conditioning solution in the production process of the device,the software and hardware design of the device was completed by selecting appropriate electrical components.Taste quality in abalone regulate fluid model establishment process,based on the characteristics of abalone regulate fluid build taste sensor array for abalone regulate fluid identification and optimization,in order to improve the recognition accuracy and efficiency.The electrochemical characteristic vector of the taste information of the reaction conditioning fluid was mapped to its physical and chemical indexes to obtain the taste quality evaluation model of the conditioning fluid and realize the taste quality discrimination of the conditioning fluid.Through the mechanical structure and electrical system hardware and software design,this device completes the filtering,cooling,divide,sampling,inspection,cleaning and a series of process requirements,can meet in the process of production of abalone regulate fluid detection function.Through the construction and optimization of sensor array,the gustatory quality discrimination model of abalone conditioning solution was established,and the quality discrimination model of abalone conditioning solution was realized.The accuracy of the model was 91.11%.The equipment has been debugged,each part runs reliably,and the recognition model has high precision.The equipment can be used to detect the taste quality of abalone conditioning solution during production. |
