With the continuous expansion of the seafood consumer market,abalone ready-to-eat products because of its unique flavor and other superiority becoming more and more popular with consumers.The taste quality of abalone ready-to-eat products is mainly controlled by the addition of conditioning liquid into the pre-cooked process.Therefore,it is possible to know the taste quality of abalone ready-to-eat products by detecting the taste quality of the conditioning liquid.At present,in the process of produce abalone ready-to-eat products,the taste quality of the conditioning liquid is generally judged by the sensory assessment staffs,but the evaluation results of it are often subjective and poor repeatability.In addition,the traditional physical and chemical analysis method can also be used to detect,but the test results are usually given only the quantitative information of a single taste,and can not reflect the whole information of the conditioning liquid.The use of taste detection system for testing abalone conditioning liquid taste will have good repeatability,otherwise give a comprehensive,accurate and rapid reflection of the conditioning liquid taste information.Therefore,abalone ready-to-eat products manufacturers in order to identify abalone conditioning liquid timely and accurately need to build a strong targeted taste quality detection system.This study based on the demand of abalone ready-to-eat manufacturers and according to the characteristics of abalone conditioning liquid explores the taste quality detection technology.And then determines the method of taste quality detection of abalone conditioning liquid.Besides according to the detection method built the taste quality detection system of abalone conditioning liquid and then test system performance by experimental application.The method of determining the taste quality of abalone conditioning liquid was determined from the characteristics of abalone conditioning liquid.Additionally this study according to the detection method from the taste analysis module,mechanical devices,electrical systems,system software and other parts design the abalone conditioning liquid taste quality detection system.Finally,through the basic taste and abalone conditioning liquid test system performance and improve the detection system targeted and at the same time the identify accuracy rate.In summary,this paper not only study the detection method of the abalone conditioning liquid for,but also according to the detection method build a practical and targeted strong abalone conditioning liquid testing system The process of taste analysis provides a feasibility program for taste testing,also provides a reference and theoretical basis.
