Vitamin B2 is an important water-soluble vitamin.Vitamin B2 is an important component of the dehydrogenase prosthetic group in the body.The function of the dehydrogenase is to perform hydrogenation in the organism's redox.Therefore,when the body lacks vitamin B2,it will affect the biological oxidation and cause metabolism obstacle.Vitamin B2 can prevent the occurrence of many diseases such as angular cheilitis,cheilitis,glossitis,conjunctivitis and scrotum.However,vitamin B2 must be provided daily by the diet because the storage of vitamin B2 in the human body is very limited.Vitamin B2 is also one of the nutritional enhancers for infant formula milk powderThis article uses vitamin B2 in infant formula milk powder as the research object.The high-performance liquid chromatography of vitamin B2 was fine-tuned and reproducibility was verified.The overall experimental results were accurate and stable,and the method was perfect.The effects of different light conditions,different temperatures,and different pH values on the stability of vitamin B2 were investigated.In addition,the stability of vitamin B2 during storage of infant formula milk powder was considered,and the system was examined through influencing factor tests,accelerated tests,long-term tests,and post-opening tests.?1?In this study,high-performance liquid chromatography was used.The standard curve equation for this method was y=0.0272x+0.0044 and the correlation coefficient R2 was0.99958.It was proved that there was a good linear relationship between the concentration of the solution and the peak area,and the minimum detection limit was 0.04?g/mL,the precision?RSD?was 0.586%,and the method was reliable.Three gradients and three levels of recovery were also conducted.The average recovery rate of the method reached 85.6%.It can be determined that this method is more accurate in the determination of vitamin B2 in infant formula.?2?The stability of vitamin B2 enhancer was studied experimentally.Experimental studies showed that the damage caused by direct exposure to vitamin B2 was the greatest,reaching a minimum preservation rate of 45%after 6 hours,and the light was relatively weak and relatively stable under dark conditions.Vitamin B2 is not sensitive to temperature,the minimum preservation rate is as high as 98%.Under alkaline conditions will result in decreased stability of vitamin B2.The loss rate after 6 hours was between 22%and 25%,while vitamin B2 was more stable under acidic or neutral conditions;different metal ions also had an effect on the stability of vitamin B2,and Na+had no effect at all.Mg2+has a great influence on the stability of vitamin B2.The loss rate of vitamin B2 is about 8%after 6 hours of reaction.Fe3+,K+,and Ca2+have a relatively small effect on vitamin B2;antioxidants have little effect on the stability of vitamin B2.While the oxidants destroyed vitamin B2 to some extent.?3?Through various experiments,the factors influencing the storage stability of vitamin B2 in infant formula powders were investigated.Through the study results,it is known that light has a significant effect on vitamin B2 in infant formula powder;sustained high temperatures also have a destructive effect on vitamin B2,and vitamin B2 may be stable under high temperature conditions,but it is sensitive to temperature after preparation of infant formula powder.The temperature has a great influence on the storage stability.During the storage process,the temperature must be controlled.The high humidity condition will cause the sample to absorb hygroscopicity and be easy to form.The packaging is also an important factor that affects the stability.After the accelerated test for six months,the cans are loaded.The average preservation rate is about 89%,and the average preservation rate of the box is about 85%,which is higher than the nutritional marker value of the sample.The tightness of the cans is good,the nitrogen in the production process makes them more stable than the bags,and the decomposition of the components of the bags increases.The packaging is an important factor that affects the stability.In the room temperature experiment,it can be seen that the stability of vitamin B2 is good;after the simulation of the normal use process after opening,it can be seen that in the food cycle,the indicators of infant formula milk powder are stable.
