The vanilla essential oil has been investigated as raw material in this research.The first package selected for optimal wall material buried vanilla oil,after screening out the best preparation conditions of the response surface method,study the physico-chemical properties of the optimal conditions for the preparation of vanilla essential oil nanocapsules.In the end,the application of vanilla essential oil nanocapsules through artificial sensory.The sustained-release nanocapsules were prepared with spray-dried method when the β-cyclodextrin,maltodextrin,octenylsuccinate starch sodium,casein were used as wall material and vanilla essential oil was used as the core material.They were evaluated to analyze the effects of four kinds of wall materials according to the nanocapsules yield,encapsulation rate,solubility,release,emulsion stability.The results showed that The yield and the embedding rate of maltodextrin and β-cyclodextrin were lower with 71.37% and 61.18%.The vanilla oil nanocapsules with octenylsuccinate starch sodium as wall material had good punching,solubility and emulsifying properties,They showed yield rate of 84.17%,the embedding rate of 78.04%.Under the condition of 60 ℃ and 10 days storage,its remained 54.62% of vanillin retention,which showed that the sustained-release was higher than the other three kinds of nanocapsules.Sodium octyl succinic acid was selected as the best wall material for the preparation of vanilla essential oil microcapsule.The results of five single factor experiments showed that core to wall material ratio,homogenization pressure and solid concentration had significant influence on the embedding yield.The optimal conditions for the preparation of vanilla essential oil nanocapsules by the response surface test were core to wall material ratio of 4:1,homogenization pressure of 20 MPa,solids concentration of 40%,respectively.Under the optimal conditions,vanilla essential oil microcapsule showed the embedding yield,the embedding rate with 97.21% ± 0.3,89.16% ± 1.2,respectively.After processing with temperature 100 ℃ for 30 h,the releasing rate of nanocapsules was 22.12%.The results showed that the nanocapsules could significantly reduce the volatilization rate of the essential oils.The physicochemical properties of vanilla orchid essential oil prepared by using sodium starch octenyl succinate as the wall material were studied.The yield,embedding rate,particle size,emulsion stability,moisture content,solubility,and fourier infrared were studied,Spectral,thermal stability,storage stability,sustained release and other indicators were tested.The infrared spectra showed that the nanocapsules was successfully encapsuled and the embedding rate was 90.64%±0.4.The results of thermal stability showed that the glass transition temperature of nanocapsules was 81.37 ℃.It showed that the nanocapsules are in glass state at normal temperature and had good thermal stability.After storage of 21 d,peroxide value of nanocapsules was 15.01 mmo/kg,indicating that the oxidation rate of essential oil could be inihibted by nanocapsulation.When it was stored at 60 ℃ and 35 d,the retention rate of essential oil in nanocapsules was 73.17%.When the higher the temperature was,the faster the release rate of nanocapsules was.All the results showed that the octyl succinic acid starch sodium and maltodextrin could become the effective wall material for the essential oil of vanilla.
