Whey protein from goat milk as raw material,the process of producing goat's milk whey protein hydrolysates by Trypsin was studied.Optimization of the enzymolysis was carried out by the single factor tests.The optimum condition of the enzymolysis as follows:with clearance of DPPH as criteria,concentration was 2%~4%,time was3h,temperature was 40?~50?,p H was 8.0 and enzyme was 3%.Based on this theory,further optimize the condition of enzymolysis.The crucial conditions were the amount of the concentration(A),temperature(B),and the pH(C).The regression equation was obtained by Box-behnken response surface test.It was:Y=71.61-2.18A+7.94B+4.52C+1.26AB+8.61AC-4.45BC-19.38A~2+9.24B~2-11.08C~2.The optimum condition of the concentration was 60?,8.0,and 3%.Goat's milk whey protein hydrolysates as raw materials were smeared the back of light-aging.The result showed that goat's milk whey protein hydrolysates was slowed down the progress of formation of wrinkles and skin elasticity deceasing induced by acute UVB irradiation.It also significantly inhibited the increase of MDA content and reduces of the content of SOD induced by exposure to the UVB irradiation.Histological observation showed that goat's milk whey protein hydrolysates was significantly delayed the light-aging of hairless mice.Determination of the formulation and technological conditions of goat's milk whey product.The formulation and technological conditions of the product were determined using appearance characters,viscosity,centrifugation stability,heat resistance,and cold tolerance as appraisal index.The results showed that the best formulation of the product is 15%goat's milk whey,5%glycerol,1%polydimethylsiloxane,1.8%GTCC,1%Tween80.
