The character of antioxidant from horse milk fat was used as raw material,in vitro antioxidant activity and mice antioxidant activity were studied.In vitro antioxidant activity,the scavenging activity against DPPH,hydroxyl and superoxide anion radical were tested,respectively.The result showed that horse milk fat antioxidant had antioxidant ability that the scavenging activity against DPPH was 59.34±4.66%,the ability to resist superoxide anion was 160.02±5.59 U/gprot U/gprot while the scavenging activity against hydroxyl radical was 52.18±2.26%which can be research next.Horse milk fat as raw materials were smeared the back of light-aging in mice antioxidant activity was studied.Study the effect of horse milk fat on wrinkle generating,measure the MDA and SOD activity.The result showed that horse milk fat was slowed down the progress of formation of wrinkles.It also significantly inhibited the increase of MDA content and reduces of the content of SOD by exposure to the UVB irradiation.Histological observation showed that horse milk fat was delayed the light-aging of hairless mice in which the effctive.Application of horse milk fat show that:The best production of horse milk fat cream was G3B2C3A2F3E3D2,the oil phase was constituted by 6%horse milk fat,1g sixteen alcohol,4g glycerol;emulsifier was constituted by Glycerol monostearate and Tween-80at the mass ratio of 2:1;The emulsification conditions was,75?emulsifying 30min at the speed of 4000r/min homogeneous cream?Horse milk fat cream quality test and efficacy evaluation study shows that:The determination of the sensory index,the physical and chemical indexes and microbial indexes shows that,horse milk fat can meet the demands of national cream health indicators,and can be used in the production and trial.
