Whey protein contains a large number of ?-lactatlbumin and immunoglobulin,lactoferrin,which has high nutritional value and health care function.In addition,there were high antioxidant active components in whey protein.In order to study the effect of different proteolytic enzymes on antioxidant capacity of camel milk and bovine milk,different proteolytic enzymes were added to whey protein of camel milk and bovine milk to explore the optimum preparation conditions of whey protein antioxidant active peptides,and their antioxidant capacity(the scavenging effect of DPPH radical,hydroxyl radical(·OH)and superoxide anion(·O2-))was compared and analyzed.A facial cleanser was prepared by single factor and orthogonal test using whey protein hydrolysate with high antioxidant activity as raw material.Based on the above experimental results,it is shown that:The hydrolysis ability of papain was the strongest after hydrolysis of camel milk and milk whey protein by four hydrolytic proteases,and the hydrolysis degree of papain was up to 15%.On the basis of single factor,the optimum preparation process was determined by response surface:the optimum hydrolysis process of camel milk whey protein was pH 6.4,the hydrolysis temperature was 55?,the substrate concentration was 2.73%,the hydrolysis time was 4 h,and the ratio of enzyme to substrate was 3%.The optimum enzyme hydrolysis process of bovine milk whey protein was pH 6,the hydrolysis temperature was 54?,the substrate concentration was 4%,the hydrolysis time was 4 h,and the ratio of enzyme to substrate was 3%.Through SDS-polyacrylamide gel Compared with camel milk and bovine milk whey protein hydrolysate,camel milk and milk whey protein were completely hydrolyzed by electrophoresis.Under the optimum conditions of enzyme hydrolysis,the scavenging rates of DPPH radical,·OH and O2-in whey protease hydrolysate in camel milk were 71.9%,58.2%and 67.2%,respectively,and the scavenging rates of DPPH,·OH and·O2-in whey protease hydrolysate in bovine milk were 69.9%,52.2%and 60.7%,respectively.The antioxidant activity of camel milk whey protease hydrolysate was higher than that of bovine milk whey protease hydrolysate to some extent,the scavenging ability of the DPPH free radical of lactalbumin hydrolysate from the camel and the cow milk both are strong,followed by·O2-removal,and as to the ability of scavenging·OH is the weakest.The best formula of camel milk whey protein hydrolysate facial cleanser is that,coconut oil amide propyl betaine 30%,coconut acyl glycine 12%,lauryl glutamate 20%,sodium hyaluronate 0.25%,EDTA disodium 0.5%,arginine 0.8%,carbomer 0.3%,glycerol stearate 5%,camel milk hydrolysate 8%,appropriate essence and preservative.Camel milk facial cleanser has better moisturizing effect,physical and chemical,sensory,sanitary indexes are in line with the national cosmetic standards,and the use effect is better.
