Study On The Food Anthropology Of Shanxi Mature Vinegar

Shanxi occupies an important position in the long history.It is located in north of China,the diet formed a unique food system,the diet with People's Daily life interaction,natural ecological environment adaptation,historical and cultural accumulation and other factors are inseparable.Shanxi Mature vinegar as the most prestigious regional specialties has also become a kind of outward culture,form a new perspective to understand Shanxi people and Shanxi Culture.This article takes Shanxi preference local taste,Shanxi Mature Vinegaras the research object,explores the reason of the mature vinegar authentic.The function of local diet in local culture and ecological environment was analyzed.The article is divided into three parts.The first part is the introduction part,the author explains the reason of the topic,and then reviews the research results related to the topic.The second part is divided into four chapters.The first chapter introduces the situation of the field,Qingxu as the birthplace of the mature vinegar is one of the reasons why the mature vinegar is authentic.The second chapter mainly from its raw material acquisition and process preparation discuss its brewing,the authentic taste of the region come from the rich crops and the continuous traditional crafts.The third and the fourth chapter mainly through the oral history data reflects the mature vinegar in the important existence of the folk,the third chapter main focus on its vinegar culture,the historical text comb the development process of the mature vinegar,from the folk spread of the vinegar story text to reflect the cultural values of regional culture.The fourth chapter summarizes the main reasons of Shanxi mature vinegar authentic,first of all,from the tradition of craftsmen to traditional crafts,followed by the results of People's daily practice in the region,again the local government to the mature vinegar promotion,its cultural packaging external output so that the mature vinegar has a rich symbolic connotation.The third part is the conclusion part,which is the author's cultural thinking about Shanxi Mature vinegar forming authentic reason under the local culture space.
