The glutinous rice in the pastoral area is based on glutinous rice,Adding low-alcoholic beverages made from fermented grains made from sprouted grains.Three types of cereals,oats,wheat,and corn,were tested and the optimum germination days for the three types of grains were determined by measuring changes in the three enzyme activities during germination.To study the dynamic changes of the composition of three kinds of grains during germination,and to compare the changes of functional components and antioxidative activities of three varieties of glutinous grains during storage period.The main results are as follows:By measuring the activity of amylase,glycosylase and protease,the optimal germination days of three grains were determined: wheat,oat and corn on the 4th day of germination.During the germination of three kinds of cereals,the content of reducing sugars showed an increasing trend from 0 to 3 days and a slight decrease from 4 to 6 days.The protein content showed a decreasing trend from 0 to 4 days and a slight increase from 5to 6 days.The content of ?-aminobutyric acid increased rapidly from 0 to 4 days,and decreased gradually from 5 to 6 days.During the germination of oats,the content of?-glucan showed a downward trend,showing a rapid decline from 0-4d and a slow decline from 5-6d.Stored at 4°C,the shelf life of three glutenous grains was 120 days.With the increase of storage days,the total phenol content and ?-glucan content of the three varieties of maggots first increased and then decreased,and the content of total phenols and ?-glucans reached the maximum in the ninth week.The contents of total phenols and ?-glucan in oat maggot were 1.1 mg/ml and 0.78 mg/l,respectively.Wheat glutinous rice was middle and corn gluten was least.Through the research on the antioxidant activity of three kinds of maggots,the order of reducing power was: VC> corn glutinous rice> wheat glutinous rice> oat glutinous rice.The order of DPPH · clearance rate is: VC> oat glutinous rice meal> corn glutinous rice meal> wheat glutinous rice meal.The order of · OH scavenging capacity is: VC>Oats glutinous rice> Wheat glutenous rice> Corn glutinous rice.The three kinds of cereals in the glutinous grains of oats have strong antioxidant activity.
