Quinoa is a dicotyledonous plant,which is native to the Indian mountains of South America.It has strong resistance to soil and environmental conditions with the planting history for more than 7000 years.Many studies have shown that quinoa is rich in nutrition and active ingredients.It is recommended as the most suitable total nutritious food for human beings.Moreover,quinoa seedling,as a vegetarian nutrition diet,became a common diet on the table.However,the nutrition of quinoa seedling nutrition is still lack of research,and lack of theoretical support for edible havest time.In recent two years,the food and health products of quinoa are increasing,but the quinoa leaf products are still rare.In order to clarify the nutritional value of quinoa seedling,to discuss the differences of nutrition in different havesting time and different cultivar,the nutritional ingredient of 3 cultivars quinoa seedling in 6 different harvest stages were determined and analysed to determine the best harvest time and variety.Meanwhile,to take advantage of the nutritive value of quinoa leaves,the high quality quinoa green tea was developed by the manufacturing process of green tea,and was evaluated synthetically through the comparison of the nutrition and sense with the Biluochun.The conclusions were as follows:1.The 38 th day was the havesting time with higher comprehensive benefit.And the nutrition was best in the 28 th day,which was most suitable for food,but it's not recommended to harvest in large quantities because of the low yield.After 43 rd day,especially on the 53 rd day,the content of nutrients was low and cellulose was the highest,so it's not suitable for harvesting.2.Compared with QC5 in Canada,QF3 in Shanxi and QM1 in Inner Mongolia were more suitable for edible.3.The optimum technology of quinoa green tea made from the leaves in the spike stages were: the airing time 6 hours,the green-killing temperature 180?,and the green-killing time 1 min.4.The nutrients of quinoa green tea were significantly higher than that of the Biluochun,except for the sugar.The content of tea polyphenols in quinoa green tea was significantly higher than that of leaves,and the change of other nutrients were small.5.The nutrition of quinoa green tea soup was higher than that of the Biluochun.The nutrient content of quinoa green tea dissolved fast,so it is recommended that the number of bubbling tea should no more than 3 times.6.The total score of Quinoa Green Tea was 94.05,which was slightly higher than that of the Biluochun Tea,and performed better in soup color,aroma and taste.
