Quinoa originated in South America,quinoa planting history can be traced back to 5000 years ago.quinoa known as the "mother of food" by the local people.After quinoa was introduced into China in 2011,there was a growing demand for quinoa in the market.The development of quinoa seedling has added the variety of quinoa products,and can solve the problems of continuous cropping quinoa,which has great market potential and development prospects.In this study,two varieties of quinoa from Shanxi and Qinghai province were selected,then three cultivation patterns such as field,greenhouse and matrix were used to plant them.The changes of the nutritional and bioactive components of quinoa seedling were determined.Determine the best harvest time,the best planting method and the most suitable planting variety of quinoa seedling,and made bread with quinoa seedling powder.Through the influence of different amount of quinoa seedling powder on the nutritional composition and sensory evaluation,preliminarily select the best amount of quinoa seedling powder in the bread.Through this study,the following conclusions are drawn:(1)Through the cultivation methods and harvest time of nutritional components of quinoa seedling,we found that the nutritional value of Qinghai quinoa seedling(limited to the varieties used in this experiment)reached the highest on the 18 th day of sampling under the condition of greenhouse cultivation,and the nutritional component contents were respectively:protein content was 30.17%,reducing sugar 12.13 mg/g,fat 2.675%,crude fiber 10.66%,total sugar 133.9 mg/g.However,at this time,the yield is relatively low,and its planting cost is high,so it is not recommended to harvest in large quantities,Although the crude fiber content was high on the 38 th day,the yield of quinoa seedling is rich,and the total protein yield of Qinghai quinoa seedling is far higher than that of Shanxi quinoa seedling under the greenhouse cultivation,which can be harvested in large quantities in the long run.(2)Through the cultivation methods and harvest time on the bioactive components of quinoa seedling,we found that the comprehensive bioactive components of Shanxi quinoa seedling were the highest at the time of sampling on the 18 th under the condition of substrate cultivation,and their contents were as follows: saponins 3.645 mg/g,tannins 4.322 mg/g,Flavonoids 7.415 mg/g,polyphenols 11.76 mg/g,and phytic acid 20.12 mg/g,respectively.(3)The contents of Na,CA,Fe,P in the seedling of Qinghai quinoa were higher than that of Shanxi quinoa,but the contents of K,Zn,Se,Cu were lower than that of Shanxi quinoa.In terms of cultivation conditions,the content of Microelements in quinoa seedling was the most abundant at the 18 th day of field cultivation.The content of Microelements in quinoa seedling was 0.155 mg/kg of selenium,9.92 mg/kg of copper,26.06 mg/kg of calcium,29.01 mg/kg of phosphorus,41.75 mg/kg of zinc respectively,4.32 g/kg of iron,5.79 g/kg of sodium,17.5g/kg of potassium.(4)In the preliminary experiment of quinoa flour bread,the best addition of quinoa flour is 1.3%,and the sensory evaluation,specific volume and other indexes reach the maximum value.In this formula,the bread has uniform color,good taste and strong smell of quinoa.Through the determination of nutritional components,when the addition of quinoa flour is1.3%,the nutritional value of the bread is the best in general Certain development value.
