Cassava starch was extracted from cassava roots,abundant in yield and easy to react with other chemicals.Maltodextrin was low level hydrolyzed starch with enzyme,followed by purification and evaporation.It has similar chemical composition with starch,while with lower apparent viscosity.In this article,the starch and maltodextrin were reacted by succinic anhydride category to prepare esterification starch,dicussing the optimum reaction condition and studying the property of the modified starch and maltodextrin to prepare the thickening reagents and surfactants.Firstly,starch succinate was prepared by the reaction of starch and succinic anhydride?SA?and the influence factors affecting reaction were detemined.The maximum degree of substitution?DS?of 0.241 and the corresponding RE of 40.2%were obtained.The viscosity of starch solution?1%,w/w?could be up to 3100 mPa·s with DS 0.241.Secondly,the starch octenylsuccinate was prepared using octenyl succinic anhydride as modifier,the maximum degree of substitution?DS?of 0.062 and the corresponding RE of 44.8%were obtained,the viscosity of starch solution?5%,w/w?could be up to 5760 mPa·s with DS0.041.Thirdly,the starch dodecenylsuccinate was prepared using dodecenyl succinic anhydride as modifier,the maximum degree of substitution?DS?of 0.024,the viscosity of aqueous solution?5%,w/w?could be up to 14480 mPa·s with DS 0.024.SEM and XRD incidates that the esterification occurred in the particle surface and has no effect on the crystalline region,while when DS gets to 0.110,the crystallinity reduced.Maltodextrin was modified by octenyl succinic anhydride and dodecenyl succinic anhydride.The maximum DS for maltodextrin octenylsuccinate and maltodextrin dodecenylsuccinate were 0.031 and 0.024 and the surface tension was reduced by 18 and20 mN·m-1 correspondingly.As is biodegradable,it can become a substitution to traditional surfactants.
