In this paper,on the basis of predecessors'research,in combination with the practical situation of starch production in China,puts forward the microwave assisted soaking process of H2SO3,and for the first time use different varieties of maize in soaking technology,the main test results were as follows:?1?Use Xundan 20?A?,Xianyu 335?B?,Denghai 605?C?,Zhengdan 958?D?and the mixed samples?E?as test materials,under the laboratory simulation condition of the production process of the corn starch,with concentration of 0.1%,0.2%and 0.3%of sulfite as soaking liquid,adjust the soaking temperature 48?,50?,52?,and 54?,respectively.To the five different varieties of maize,when the moisture content of corn grain come to 42%,the soaking process is ended.Experimental results show that the time for the five samples'moisture content of corn grain come to 42%was A:36.5h,B:36.0h,C:37.3h,D:36.9h,E:37.1h,respectively.The optimum conditions is soaking temperature 54?and sulfite soaking liquid concentration of0.3%.Rank the five samples as the soaking time as follows:B?Xianyu335?<A?Xundan20?<D?Zhengdan 958?<E?mixed?<C?Denghai605?.?2?During microwave assisted H2SO3 soaking technology,The optimum conditions of the five samples is microwave power 700 w and microwave time 5 min.The phase of sulfite soaking is after the microwave soaking phase.This phase concentration soaking temperature and sulfurous acid as the single factor experiment,the time for corn grain moisture content of 42%is the ended,the water content in corn germ,dry matter in soaking liquid,total sugar,protein content as auxiliary test indicators.When the moisture content of corn grain come to 42%,the soaking process is ended.The results showed that 54?,0.23%H2SO3,soaking time is the shortest.The results showed that all 5 samples under the condition of 54?,0.3%H2SO3,soaking time is the shortest,respectively A:27.4h,B:26.8h,C:28.5h,D:27.9 h,E:28.3h.?3?In the sulfite soaking phase,using the Design Expert software,adopting Central Composite analysis method,combining with the single factor experiment,in different samples of maize soaking refers to the shortest time for the grain moisture content 42%as the response value,Soaking temperature and concentrations of sulfite as influencing factors,the response surface optimization experiment was carried out,respectively to get 5 maize samples of immersion time and the corresponding shortest quadratic regression equation:A:Y=33.50-2.54X1-1.29X2-0.55X1X2-1.41X12-0.68X22B:Y=32.0-2.57X1-1.05X2-0.10X1X2-1.37X12-0.59X22C:Y=32.08-1.54X1-1.46X2-0.25X1X2-1.37X12-0.59X22D:Y=32.90-2.43X1-1.46X2-0.51X1X2-1.67X12-1.48X22E:Y=34.10-2.14X1-1.39X2-0.34X1X2-1.64X12-1.46X22After test,get the optimum conditions of the five samples,all of them are under the condition of 54?,and the H2SO3 content was A:0.26%,B:0.26%,C:0.30%,D:0.28%,E:0.27%,respectively.The shortest soaking time is A:26.96h,B:26.20h,C:28.10h,D:27.61h,E:27.99h,respectively.?4?Based on the optimal condition of the response surface optimization,validation test.Validation test results close to the optimal conditions,and the shortest time respectively A:27h,B:26.2h,C:28.1h,D:27.6 h,E:28.0h.The fitting is good.As well as for a single variety of corn starch production to be provided basis for this view.?5?The results of traditional H2SO3 soaking technology comparing with the new microwave assisted soaking process of H2SO3 show that in the new process condition,the five samples'soaking time were significantly shortened,compared with the traditional process,shortens over 10 hours.
