Cold preservative preservation is one of the important factors restricting the development of cold meat.Plant preservative has become the direction of anti-preservation research and hot,because it's safety,non-toxic,easy using,no health hazards in using chemical preservatives,no environmental pollution and other issues;and storage conditions are easy to control.Then,this paper is based on the major fungi Staphylococcus aureus,Bacillus subtilis,Bacillus cereus,Salmonella,Pseudomonas to screen the antibacterial activity of 139 kinds of plant-derived substances such as cinnamon,ginger and asarum in order to lay the foundation for the development of meat preservative.The main findings are as follows:1.The plant extracts of 139 kinds of plants were screened by the inhibition zone method.It was found that 70 kinds of plant materials had inhibitory activity against one kind of tested bacteria at least.Among them,cinnamon essential oil,thyme oil,Wear broken stone have significant antibacterial activity on the three kinds of tested Gram-positive bacteria and two kinds of tested Gram-negative bacteria.Rosemary essential oil,garlic have better antibacterial activity on the three kinds of tested Gram-positive bacteria and Salmonella.Asarum,Magnolia,Guanzhong have significant antibacterial activity on three kinds of tested Gram-positive bacteria.2.The minimum inhibitory concentration of four plant extracts was determined that the MIC of Asarum Magnolia,Guanzhong,Wear broken stone to S.aureus,B.subtilis and B.cereus were 100 ?g / mL,50 ?g / mL,50 ?g / mL;100 ?g / mL,100 ?g / mL,100 ?g / mL;100 ?g / mL,50 ?g / mL,50 ?g / mL;400 ?g / mL,400 ?g / mL,400 ?g / mL.The four antibacterial activity order is Guanzhong ? Asarum > Magnolia > Wear broken stone.In summary,cinnamon essential oil,thyme essential oil,rosemary essential oil and garlic,Asarum,Magnolia,Guanzhong,Wear broken stone of these eight kinds of plant material have a significant antibacterial activity,are expected to develop for the plant source cold meat preserver.
