Agaricus bisporus with rich nutrition and health effects are very popular with people.Agaricus bisporus will continue to growth after harvest,depleting their nutrients and were influence by environmental factors.Compared with other fruits and vegetables,Agaricus bisporus were not resistant to storage.there are lots of research devoted to Agaricus bisporus postharvest preservation,and has achieved good results.However,there are few studies on the effects of storage methods on the shelf sales of Agaricus bisporus.Therefore,this study focuses on associate preservation methods of Agaricus bisporus with shelf sales to study the impact of the common storage methods on the shelf life of Agaricus bisporus.The test conditions establishmented was based on the existing conditions in the supermarket,so as to provide some feasible and effective suggestions for Agaricus bisporus saled in supermarket.The shelf life of Agaricus bisporus was studied by combining the pre-cooling with the modified atmosp Here packaging.Settingset the pre-cooling time was control group ck,6 h,12 h,24 h,the results show that:(1)At(3±0.5)?(simulation supermarket fresh cabinet)the whiteness and hardness of the packaged Agaricus bisporus after pre-cooling 24 hours can be better maintained,and the weight loss rate as well as the respiration rate is lower,in addition,the PH value is maintained at a high level.the whiteness of the pileus is only lower than the Agaricus bisporus which was pre cooled for 6 hours.(1)At(15±0.5)?(simulate room temperature sales cabinet),the whiteness(pileus and flesh)and the hardness of the packaged Agaricus bisporus after pre cooling 12 hours can better maintained.(3)At(20±0.5)?(simulate room temperature sales cabinet),the whiteness(pileus and flesh)of the packaged Agaricus bisporus after pre cooling 6 hours can better maintained.Inorder to study the impact of pre cooling on shelf life of Agaricus bisporus deeply,the final temperature of pre cooling was measured in the experiment the results show that:in this three shelf temperatures((3±0.5)? ?(15±0.5)? ?(20±0.5)?),the whiteness and hardness of the Agaricus bisporus which the end temperature was(7±0.5)? can be better maintained,meanwhile,the weight loss rate as well as the respiration rate is low.Using the methods of comprehensive experiment to study the changes of shelf life of Agaricus bisporus with different treatments.Agaricus bisporus was refrigerated storage for 2 days after pre cooling with different temperature and time.The results showed that:(1)At(3±0.5)?,(control group),the hardness and the PH value of the Agaricus bisporus which were pre cooled at(5±0.2)? for 6 hours can be better maintained.with lower respiration rate,and the soluble solids content were higher(2)At(4±0.5)?,the hardness and the whiteness(pileus and flesh)of the Agaricus bisporus which was pre cooled at(1±1)?for 6 hours can be better maintained and the respiration rate was lower,(3)At(20±0.5)?,the whiteness(pileus and flesh)of the Agaricus bisporus which was pre cooled at(5±0.2)? for 6 hours can be better maintained and the p H value and soluble solids content were higher.High oxygen atmosphere is generally recognized as an effective method of keeping fresh of the Agaricus bisporus.The test results showed that:(1)at(3±0.5)?,Agaricus bisporus stored under high oxygen atmosphere could still maintain good quality.The best quality appeared after treatment with 80%O2+20%N2.(2)The quality of Agaricus bisporus refrigerated at(20±0.5)? for 5 days sold better than others.The quality deterioration of Agaricus bisporus accelerated after 80%O2+20%N2 treatment.
