With the change of diet and living habits,obesity has become a global public health problem.Anti-obesity effect of tea and its extracts have been confirmed and have been paid more and more attention.Based on the anti-obesity research of three kinds of tea extract(green tea,black tea and oolong tea)in our laboratory,this article aims at comparing the anti-obesity effect of different functional factors extracted from different tea.The best one was selected to develop a kind of anti-obesity beverage.Male SD rats were used to establish the animal model of preventing obesity.Body weight and food intake were recorded.According to the measurement results of lee's index,visceral fat weight,biochemical profile,fat cells morphology and quantity,fecal fatty acid component and content,the anti-obesity activity of the tea extracts was verified.Compared with the model control group,as can be seen from the results,the body weight,Lee's index,fat weight of treatment groups and serum TG content significantly decreased.Correspondingly,serum HDLC and adiponectin content significatly increased.And serum TC and LDLC levels decreased.The increase of fecal excretion of fatty acid showed that functional factors endows such activities as control the body weight,reduce the lipid accumulation,inhibit the fat cell enlargement,increase the fatty acid discharge.In a word,the anti-obesity activity of the tea extracts has been confirmed.According to the research results of sensory evaluation,the optimal technologic conditions for debitterize of black tea polyphenol was that 1.2%?-CD was added into the black tea polyphenol solution,and then stirred for 60 minutes at 40?.The best formula of solid beverage has been eventually determined by orthogonal experiment:1.2%xylitol,0.005%sucralose and 0.06%malic acid.
