Due to the current fine dietary structure,people's intake of dietary fiber is gradually reduced,and it also brings many health problems to people.People gradually realize the importance of dietary fiber in the diet structure.It is known that oat bran is a raw material rich in dietary fiber.In order to effectively improve the daily intake of dietary fiber,oat bran was used to develop oat high dietary fiber mixing powder.In this study,the main research is to use oat bran as the main raw material.Through the treatment of oat bran with different curing process and the choice of crushed particle size,the optimum maturing process and granulometry of oat bran are determined.At the same time,the oat bran powder was compounded.In the end,we can develop an mixing oat high dietary fiber mixing powder and sugar-free oat high dietary fiber mixing powder.To meet consumer demand for high dietary fiber foods.(1)The basic nutrient content of oat bran was measured.17.23%of the dietary fiber contained in oat bran was analyzed,and the regulations for high dietary fiber foods in GB208050-2011 were met.The oat bran was pretreated.The oat bran was subjected to microwave,baking and steaming processes.After steaming,the oat bran had the best effect.The steamed oat bran had a viscosity of 62.20%and a viscosity of 1.8 Pa·s,the degree of gelatinization and viscosity of oat bran after steaming process is higher than that of the other two ripening processes.It is concluded that the most suitable aging process for oat bran is steaming;drying of oat bran for steaming and curing After smashing and sifting,viscosity,brewing stability,etc.were used as indices to study the brewing properties of oat high dietary fiber powder at different particle sizes.When the particle size was 100-120 mesh,the viscosity of oatmeal high dietary fiber powder was 1.85 Pa s,the centrifugal sedimentation rate was 2.01%,and the oatmeal high dietary powder had the best reconstitution.It was determined that the optimal particle size of oat bran was 100-120 mesh.(2)Preparation of common oatmeal high dietary fiber reconstitution powder:using oatmeal high dietary fiber powder after steaming and having a crushed particle size of 100-120 mesh as the main raw material,and preparing different proportions of white sugar,citric acid,and milk powder The amount of addition was subjected to a single factor test.The appropriate amount of addition was determined:the amount of white sugar added was 10%,the amount of milk powder added was 15%,and the amount of citric acid added was 0.5%.Using the sensory score as an indicator,response surface methodology was used to optimize the formulation of normal oatmeal high dietary fiber reconstitution powder.The optimal formula was:white granulated sugar was 10.16%,milk powder was 15.43%,and citric acid was 0.5%.(3)Preparation of sugar-free oatmeal high-dietary fiber reconstitution powder:The prepared oat high dietary fiber powder was used as the main raw material,and xylitol was used instead of white sugar to mix xylitol,citric acid,and soybean protein powder in different proportions.A single factor test was conducted on the amount of added soybean phospholipids,and the appropriate amount of addition was determined:xylitol was 15%.citric acid was 0.4%.soybean protein powder was 3%.modified soybean phospholipids was 0.4%.The orthogonal test was used to determine the best formula of high sugar-free oatmeal dietary fiber powder:xylitol was 20%.citric acid was 0.3%.soybean protein powder was 5%.and modified soybean phospholipid was 0.5%.
