N?-Carboxymethyl-lysine(CML)is the most widely studied of Advanced Glycation End Products(AGEs).A large number of studies have shown that the accumulation of AGEs in the human body leads to Many chronic diseases are produced,and dietary intake is the main source of CML.Therefore,controlling the intake of food-borne CML is of great significance for preventing the development of chronic diseases.The first experiment in this paper is the experiment of white vinasse.By optimizing the single factor experiment of extraction solvent,extraction volume,extraction temperature,extraction time and extraction times,the optimal extraction conditions are determined by using the total phenolic content as the optimization index.The results showed that the optimal extraction conditions were as follows: weigh 0.2g of white wine distiller's grains,add 6m L of 70% acetone,extract it at 60 °C for 40 min,centrifuge at 4000 rpm for 5min,collect the supernatant,and continue the above operation for 3 times.The supernatant was evaporated to dryness and then adjusted to a volume of 70% acetone to 5 m L for use.The white vinasse extracted under optimal conditions had good antioxidant activity.The DPPH free radical scavenging rate was 64.37%,and the FRAP antioxidant capacity was 4.63 m M FE(II)/g.The inhibition rate of CML in dairy products reached 43.2%.The main phenolic acids in 70% acetone white wine distiller's grains extract were classified and identified by HPLC-MS/MS-VWD,and vanillic acid,chlorogenic acid,syringic acid,sinapic acid,coumarin,caffeic acid were identified.And seven major phenolic acids of ferulic acid.Further purification experiments of the intermediate product glyoxal with these seven phenolic acids showed that the seven phenolic acids had good scavenging effects on glyoxal,including vanillic acid,chlorogenic acid,coffee acid and ferulic acid and glyoxal form an additive product.The optimal extraction conditions were determined by optimizing the extraction solvent,extraction volume,extraction temperature and extraction time.The optimal extraction conditions were as follows: 0.2g was weighed.Corn mustard,add 6m L of 80% ethanol,extract at 60 ° C for 50 min,centrifuge at 4000 rpm for 5min to collect the supernatant,the remaining residue continues the above operation 2 times,combined with the supernatant,rotary evaporated to a volume fraction of 80% The ethanol was brought to a volume of 5 m L for use.The clearance rate of DPPH free radicals by 80% ethanol corn silk extract was 84.38%,and the free radical scavenging rate of ABTS was 89.11%,indicating that the corn silk extract had good antioxidant activity.The inhibition rate of corn mustard extract to CML in the oil model can reach 76.57%.Using HPLC-MS/MS-VWD,it was identified that the corn mustard extract contains nine main types of scutellin,proanthocyanidins,luteolin,quercetin,ruthenium,kaempferol,genistein,apigenin and rutin.Flavonoids.The inhibition mechanism of these nine flavonoids was determined,and the intermediate products were eliminated by the addition reaction with MGO and GO,thereby inhibiting the production of advanced glycation end products CML.
