Salted eggs which have the advantages of rich nutrition,unique flavor and easy storage are traditional egg products in China.At present,there are almost no efficient salted eggs pickling equipment.Salted eggs are usually salted in traditional tanks or barrels in factories..The maturation period is long,generally more than 20 days.Labor intensity,high breakage rate and the quality difficult to control are also the drawback of traditional curing methods.In order to improve the salting quality of salted eggs,shorten the salting period,reduce the labor intensity of workers and increase production efficiency,medium-term test system for rapid salting of salted eggs has been designed on the basis of fully absorbing the salting eggs theory and improving the shortcomings of the existing salted eggs salting device.The system consists of pickling device,pipeline system,heating system and PLC control system.The structural design mainly includes pickling device,pipeline system and heating system.Three-dimensional model of medium-term test system for rapid salting of salted eggs was built by ProE.The main part of the salting device includes the salting room and the mixing tank.Pipeline system is mainly composed of stainless steel pipes,pumps and solenoid valves.The heating system mainly includes stainless steel heat exchanger,electric control valve,steam pipe and boiler.According to the three-dimensional model,the size of the curing device,the connection method of the pipe and the installation method of the heating system are determined.In the overall part of the control designing system,the control scheme is determined according to the technological requirements of salting eggs,and the selection of the controller and the electronic components is completed.The signal acquisition,manual control and automatic control program were programmed based on STEP7 Micro/WIN software.The touch screen operation interface was configured with WinCC flexible SMART V3 software.the human-computer interaction interface was designed by WinCC 7.3,and the remote control and full automation of salting eggs were realized by the organic combination of each parts.In the part of designing temperature control system,aiming at the problem of non-linearity and large lag of temperature control,a scheme of fuzzy PID control is formulated by analyzing the characteristics of traditional PID control mode and fuzzy control mode.The traditional PID control and fuzzy PID control scheme were modeled and simulated by MATLAB/SIMULINK software.The fuzzy PID control program was designed based on STEP 7 Micro/WIN,and the temperature control experiment was carried out.Finally,the fuzzy PID control mode was determined as the temperature control strategy of the pickling system.In order to verify the practicability and reliability of the medium-term test system for rapid salting of salted eggs,tests of salting eggs were carried out after system debugging.Comparative tests showed that the salted eggs cured by the medium-term test system for rapid salting of salted eggs were moderately salty,and the egg yolk has obvious oil after cooking.It reduced the breakage rate of salted eggs and the curing period was shortened to 8 days which is 76.5% comparing to traditional method.Salt consumption decreased by 26.9%.
