Zhejiang Province is located on the southeast coast,and it is humid and rainy all year round.It belongs to the subtropical monsoon climate.As a typical representative of the land of fish and rice in the south of the Yangtze River,Zhejiang produces and consumes a large amount of rice every year.Rice is the predecessor of rice,so whether it is scientific for its storage after harvest will directly affect the quality and taste of processed rice.Rice is greatly affected by environmental factors,especially temperature and humidity.It is prone to mildew and yellowing in high temperature and high humidity environment,which eventually leads to aging and loss of edible value.In this paper,the high-temperature japonica rice,which is more common in the market,was used as the experimental object to study the germination rate,free fatty acid content,the total number of mold colonies and the roughness,conductivity,reducing sugar content,moisture content and texture characteristics of rice during storage.The change situation;using UV and ozone interaction treatment and temperature control nitrogen gas regulation technology,through orthogonal design and two-way analysis of variance to screen out the most effective rice preservation treatment program,and verify the reliability of its optimization program.In addition,according to the storage characteristics of rice and the best storage plan,comprehensive consideration of the design of a utility model of high moisture rice storage silos.The main results of this paper are as follows:(1)Changing the fumigation concentration,fumigation time and ultraviolet radiation dose of ozone through single factor test.The results showed that ozone concentration of 75 mg/kg and fumigation for 20 min had the highest germination rate,the least free fatty acid content and the relatively small total number of mold colonies.When the UV irradiation was 7.2KJ/m~2,the germination rate was the highest,and the free fatty acid and mold colony were relatively small.(2)The results of ozone and ultraviolet coupling treatment showed that the highest germination rate was 86%in the treatment group of 55 mg/kg ozone,20 min fumigation time,7.2KJ/m~2 ultraviolet irradiation(represented by J-55-20-7.2),and the minimum free fatty acid value was 16.16KOHmg/100g in the treatment group of J-75-10-7.2.Compared with J-55-30-7.2,J-75-20-7.2,J-95-10-14 and J-CK,the best treatment group was J-75-20-7.2,and the effect of this group was significantly better than other groups(P<0.05).(3)Design by two-way ANOVA,a nitrogen gas concentration and temperature changes,to store the high moisture rice.The results showed that in the treatment group with storage temperature of15?and nitrogen concentration of 95%and 98%,the test indexes were significantly better than other treatment groups(P<0.05),which could effectively prolong the storage time of japonica rice and prevent rice from being deteriorated.To ensure its good eating quality.(4)High moisture paddy storage device is simple in design,safe and reliable,low in cost,and combines ultraviolet,ozone,controlled temperature and controlled nitrogen atmosphere storage and fresh-keeping new technology and innovative rolling device,so that the storage device has the advantages of large capacity,easy ventilation,and storage resistance.Thus,the whole high moisture paddy heap can safely pass through the high temperature and humidity environment,effectively keep the quality of grain fresh,and will not deteriorate due to environmental impact.
