With the development of social economy,the improvement of people's living standards and the diversification of diet,the per capita consumption of seafood is also increasing year by year,which brings convenience to people's life,but there are also food safety problems.The pollution of heavy metals will cause the residue of heavy metals in food varieties to exceed the allowable national standards,and the marine pollution is becoming more and more serious,resulting in the increasing content of heavy metals in seafood.The consequences may lead to the adverse health consequences of the masses,which should attract the attention of the whole society.therefore,relatively accurate testing methods should be used to analyze the content of heavy metals in seafood.Then the data of the results are analyzed and the related food risks of the residents are evaluated.in this way to protect the health of the local people,it can be seen that the research in this area has a certain social and economic significance.In this paper,different types of seafood from supermarkets and farmers' markets in 4 prefectures,counties and cities of Jilin Province were selected as the research object,and 320 fresh seafood samples were collected,including more than 80 samples of marine fish,cephalopods,crustaceans and bivalves respectively.According to the current effective detection methods of the state,the wet sample disposal is carried out,and then the contents of lead,cadmium,arsenic and mercury in the experimental samples are tested by atomic absorption spectrometry,and the detected data are analyzed.Take the national standard as the judgment basis,to understand whether the content of these four metals has an impact on the physical condition of the residents,so as to evaluate its safety,in order to provide the basis for people's daily consumption.The results showed that all the four heavy metals were detected,among which the detection rates of lead and cadmium were higher,and the detection rates of arsenic and mercury were lower.There are two kinds of heavy metals that do not exceed the standard,namely arsenic and mercury,lead and arsenic.The detection rate of heavy metal residues in seafood of 4 cities was above 8%.The detection rate of heavy metals in cephalopods and bivalves was higher than that in marine fish and crustaceans.The over-standard rates of cephalopods and bivalves were 5.13% and 9.52%,respectively.The average daily intake of the four heavy metals was lead > cadmium > arsenic > mercury from high to low,and the order of maximum daily intake was lead > cadmium > mercury > arsenic.From a separate pollution point of view,several heavy metals can not produce significant harm to the health of the local people,but from the point of view of compound pollution,the content of several heavy metals may affect human health.Management and prevention tools should be strengthened.
