Sulfite has been widely used in food as a kind of food additive.But it can cause systemic damage to body when intake too much.In order to protect the health of consumers,it is very important to establish a way to detecte sulfur dioxide and feasible removal of sulfite content rapidly in food.The main research contents of this paper were as follows:1.OPA,sulfite and ammonium salt can react to generate strong fluorescent compounds under the condition of weak acid,using the reaction system to establish fluorescence method which is used to food.Under the best condition,in a solution of pH 6.6 medium,sulfite,ammonium salt and OPA can react to generate strong fluorescent compounds,the fluorescence intensity and the concentration of sulfite(SO2)showed good linearity in the range of 0-9.60 mg/L,the regression equation is y=402.01x-146.05.The correlation coefficient is 0.9994;the recovery rate of this method is between 99.24%and 113.55%.2.The method of removal of sulfite in nung bean sprouts were studied.Mung bean sprouts were distilled in nitrogen condition,the volatilization of SO2 was absorbed by the sodium hydroxide solution at room temperature,and was detected by the OPA fluorescence method.The method of scavenging sulfite in mung bean sprouts was studied,too.Bean sprouts were dealed with water,acetic acid solution,salt solution,sodium carbonate solution and rice water.The results showed that at 65?,mung bean sprouts were soaked in 150.00g/L rice washing water and 2.00g/L sodium carbonate solution for 1.5h,the removal rate of sulfite can reach 66.41%-72.83%and 67.07%-80.12%respectively.3.Strong fluorescent substances were generated based on trihexyphenidyl hydrochloride-Ce(?)-sulfite under the conditions of weak acid or neutral.A new method of sulfites in food detection and the optimum conditions for the determination of sulfite determination were established in this paper.Under the optimal conditions,the sulfite content between the 0.02g/L-lg/L showed good linearity,and the linear equation:y=8031.7x-203.31,the correlation coefficient was 0.9968;the method detection limit was 0.001?g/mL.The relative deviation was 6.08%,the recovery rate was between 82.39%and92.81%.
