Walnut is a nut fruit,with high oil content.China has rich walnut resources.With the promotion of fine walnut varieties,the yield and quality of walnut will be greatly improved.Walnut oil is a kind of healthy edible oil with high nutritional value.It has a broad market prospect.How to obtain high quality walnut oil,improve the processing technology of walnut,and improve the added value of walnut kernel is the main problem in the production of walnut.At present,mechanical pressing is the most common way to produce walnut oil.The technology is simple and flexible,and the drawback is low yield,walnut protein denaturation,high walnut residue oil rate and low reuse value.The main technological process of extracting walnut oil and producing walnut milk by water generation method was preliminarily discussed.It is of great economic and practical significance for walnut oil producers to choose the best process route to control and improve the quality of products and enhance the further processing and utilization of by-products.The extraction process of walnut oil by water generation is simplified,the amount of equipment invested is less,the cost of production is reduced,and the oil production rate of walnut oil is also improved.This test studied the walnut peel method,process of water generation preparation of walnut oil were optimized,the extraction of oil walnut dregs as raw material for the production of walnut milk,walnut oil in order to ensure the best stability,analysis of thickener,emulsifier,and homogeneous conditions join the sterilization process,determine the optimal parameters.Finally,the physicochemical indexes and microbiological indexes of walnut milk were measured.The results showed that the best condition for walnut peeling was the best mixture of 1:1(v/v)3%Na2CO3 and 9%Ca(OH)2 mixed alkaline solution for 5min at45.The highest yield rate of water generation method is:the material water ratio is 1:3,the pH value is 4.5,the concussion temperature is 65 degrees,the extraction time is 150min,and the oil yield can reach 78%.The formulation of walnut milk was8%for sucrose,0.15%with citric acid and 0.02%for the essence.The optimal scheme for the allocation of walnut milk is that the compound emulsifier is 4:6,pH is 6.7-7.1,the homogenization temperature is 65℃,and the compound stabilizer is carrageenan:PGA:xanthan glue=1:1:0.2.The homogenization condition of walnut milk is two homogenization for walnut milk at the temperature of 65 C and 30MPa.The best conditions for germicidal test are:the temperature of germicidal temperature is 121℃,and the time of sterilization is 20min.The physicochemical indexes and microbiological indexes of walnut milk were all in accordance with the national standard.Aiming at various quality problems caused by low protein content and high fat content of walnut milk,walnut protein milk beverage with high protein content and delicious taste can be prepared through the above process conditions.The experimental process is innovative and practical,the utilization of walnut kernel is high and the market prospect is good.
