Walnut kernel is invigorant of abundant oil, protein and vitamins. The unsaturated fatty acid in walnut oil is more than 90%. Walnut oil is nutritious oil which is rich in flavones.Walnut kernel is a special oil plant of abundant oil. Aqueous extraction of walnut oil was investigated. The optimal conditions were found at: walnut kernels were soaked in the mixture of 2% Na2CO3 and 10% Ca(OH)2 to peel, washed by water, dried, squeezed, milled, mixed(ratio of solid to liquid 1:0.8,pH6,75℃),separated by centrifuge and extracted. Under this condition, the extractability of oil was over 90%. The quality of walnut oil by aqueous extraction reached the standards of edible oil. The flavones in 100g walnut oil are 30.37mg. The technics are simple in the operation, low in the investment and cheap in the cost, suiting the production of small-scale and special-kind oil materials.The walnut serosity obtained from aqueous extraction of oil from walnut kernel has a great deal of protein. To increase dissolving rate of protein, soak the walnut serosity first. For the sake of increasing emulsion stability of walnut protein milk, add emulsifying agents and stabilizing agents and search the better ratio: the compound of emulsifying agents 0.3% (w/w), xanthan gum 0.15%, sodium alginate 0.2%. At last, the scale-up experiments were carried out.
