The research is focus on the high-quality indica rice of harvest FengYou22(FY22)in 2011.Adjusting it into different temperatures(15℃、20℃、23℃、25℃、28℃、30℃、33℃), different moistures(13.5%、14.5%、15.5%)and different atmosphere storage(nitrogen, air) for 3 years. Test periodically FY22 each quality index during the period of storage and study the influence of the quality change controlled storage conditions. In order to obtain characteristic indexes represented the storage quality of FY22 and ascertain the primary and secondary factors effecting the quality change. The experimental results showed that:1.By principal component analysis, four principal components can represent FY22 overall quality, which contains the index has breakdown, gelatinization temperature, peak viscosity, setback, rice stickiness, rice appearance, rice taste, germination rate, fatty acid value, rice water solid, gel consistency, amylase content. After comprehensive analysis, finally determine the germination rate, fatty acid value, and water solid as evaluation index of FY22.2.During the period of storage, the higher the temperature, the faster germination rate decline, the faster fatty acid values rise. In the prophase of storage, the higher the temperature, the faster rice water solids content decrease, at the late stage of storage, temperature on the impact is not big. Samples store at 25℃ below and 30℃ 33℃, germination rate and rice water solids have very significant difference; samples store at 28℃ below and 30℃ 33℃, the difference of fatty acid value is remarkable.3.During the period of storage, the higher moisture content, the faster germination rate decline, the faster fatty acid values rise. The influence of moisture content to rice water solids is not big. Samples store under the condition of 13.5% and 14.5% 15.5%, the difference of germination rate is remarkable; samples store under the condition of 13.5% and 15.5%, the difference of the fatty acid value is remarkable; Rice water solids are little affected by the moisture content, the difference is not significant.4.In the prophase of storage, atmosphere storage and air storage have not much difference on germination rate. In the mid-late storage, the range of fall of germination rate under atmosphere storage is smaller than it under air storage. In contrast, Atmosphere storage is more conducive to delay the fatty acid value rising at high temperatures. Atmosphere storage and air storage have not much difference on rice water solid content. The germination rate, fatty acid value and the rice water solids are not significant difference under different storage modes.5.Based on correlation analysis of the characteristic index of FY22 and storage conditions, show that the correlation of storage temperature to quality index of indica rice is the largest, the second is the moisture content, storage way influences on rice characteristic index is most non-obvious.
