As a new type of condiment,vinegar powder has slowly entered the public eye.This article adopted vacuum freeze-drying technology to dry the smoked vinegar fermented grains obtained by the traditional process of Shanxi old vinegar,and then pulverized the vinegar powder.By measuring the various functional nutrients and active ingredients of the vinegar powder to evaluate its functional characteristics,and studied on the in vivo hypolipidemic,auxiliary hypoglycemic and antioxidative effects of the miscellaneous grains functional vinegar powder.Finally,used the tableting process to make the miscellaneous grains functional vinegar powder tablet,aiming to provide theoretical support for the development of vinegar powder related products.The specific research results are as follows:1.With bitter buckwheat powder,oat bran,black soybean skin as raw materials,the traditional Shanxi vinegar brewing process was used for brewing and smoking,after smoked,the materials were vacuum freeze-dried and crushed to prepare miscellaneous functional grains vinegar powder.With the drying rate and total acid content as indicators,the influencing factors of freeze-dried miscellaneous grains vinegar powder was analyzed by single factor and response surface optimization tests,and the freeze-drying process was optimized.The results showed that the optimal freeze-drying conditions were pre-freezing temperature-40 ?,material thickness 9 mm,sublimation temperature 28 ?,analytical temperature 33 ?.At this time,the miscellaneous grains vinegar powder drying rate of 3.60 %/h,the total acid content of 8.53 g/100 g.2.The comparison among the ingredients of the miscellaneous grains functional vinegar powder,the Shanxi old vinegar powder and the raw materials of the miscellaneous grains vinegar powder can be seen that the miscellaneous grains functional vinegar powder had its own unique advantages in both conventional ingredients and functional ingredients.Polyphenol flavonoids,?-glucan,anthocyanin and ligustrazine would give vinegar powder a variety of effects such as lowering blood fat and blood sugar,lowering blood pressure,regulating body metabolism and anti-oxidation,and providing a certain direction for the follow-up study of the miscellaneous grains functional vinegar powder.At the same time,it also showed that the miscellaneous grains functional vinegar powder can not be limited to condiments,but to the direction of health products.3.The hyperlipidemia mouse model was established by feeding high-fat diets to study the hypolipidemic,hypoglycemic and antioxidative effects.The results showed that the miscellaneous grains functional vinegar powder could effectively reduce the content of TC,TG and LDL-C in serum of hyperlipidemia mice(p<0.05),effectively increase the serum HDL-C content(p<0.01),reduce the MDA content in the liver of mice,and increase the SOD,CAT and GSH-PX activity(p<0.05),and had a certain hypoglycemic effect.The results showed that the various grains of vinegar powder can effectively regulate blood lipid and blood glucose level and increase antioxidation,and the effect of high-dose vinegar powder group was significantly better than other groups.4.The miscellaneous grains functional vinegar powder was tableted by powder direct compression method,and the tableting process was optimized.The experiment set tableting machine filling depth 9.6mm,turntable speed 20 r /min,pressure 20 KN,the best process for determining the tablet by single factor and orthogonal experiment was the addition of microcrystalline cellulose 102 type 18%,anhydrous lactose added The amount of 12% and the amount of magnesium stearate added was 1.6%.Under this condition,the friability of the miscellaneous grains functional vinegar powder sheet was 0.24%,and the disintegration time was 24.60 min.
