Royal jelly,also known as bee jelly,contains a large number of biologically active substances.These active substances are significantly good for antioxidant,antibacterial,anti-aging,cardiovascular system and immune system and so on.However,fresh royal jelly is inconvenient to store at room temperature and is easily deteriorated due to factors such as air,water vapor,light,and heat.The purpose of this research is to obtain freeze-dried royal jelly powder of fresh northeast black bee royal jelly by vacuum freeze-drying,and then process the freeze-dried powder to produce effervescent royal jelly tablets that are convenient for consumption.This experiment mainly includes the selection of ameliorants for freeze-dried royal jelly powder,the formulation of parameters for vacuum freeze-drying process,and the optimization of effervescent tablet formulations.The specific content is as follows:1.Using sensory evaluation,solubility,and water content as test indicators,orthogonal test was performed on the quality improver of Northeast Black Bee Royal Jelly,and the optimal formula was obtained: the addition amounts of maltodextrin,mannitol and lecithin were respectively 10%,8%,1.5% of the total solids of royal jelly.Under this formula,the measured water content of lyophilized royal jelly powder is 2.35%,which is 48.5% lower than that of the blank group;the solubility is 98.21 g/100 g,which is increased by 7.4% than the blank group;the sensory score is 44.5 points,The taste and flavor have been greatly improved;protein,10-HDA and other indicators are in line with the requirements of first-class royal jelly freeze-dried powder national standards.2.Taking the drying rate as the test index,The orthogonal test was performed on the pre-freezing process.The results showed that the pre-freezing process parameters are as followed: the filling thickness 8 mm,the pre-freezing time 6h,and pre-freezing temperature for the maximum freeze-drying rate-40?.The sublimation drying vacuum degree,the sublimation drying temperature,the desorption drying vacuum degree and the desorption drying temperature were subjected to a quadratic regression orthogonal rotation combined test.The results showed that the influence of each factor on the drying rate is list as followed: sublimation drying temperature> desorption drying temperature > sublimation drying vacuum degree > desorption drying vacuum degree.The best process conditions are as follows: sublimation drying vacuum degree 40 Pa,sublimation drying temperature 30?,desorption drying vacuum degree 15 Pa and desorption drying temperature 25?.Under this optimal parameter,the drying rate of royal jelly is3.965 %/h.3.The single factor test and the quadratic regression orthogonal rotation combination test were carried out on the formula of royal jelly effervescent tablets.The results showed that the order of the influence of each factor on the comprehensive score was: disintegrant> excipient>flavoring agent.The best formula is determined to be citric acid and sodium bicarbonate as disintegrants;mannitol and lactose as excipients;blueberry powder as flavoring agent;the best ratio of the three is the amount of royal jelly lyophilized powder added.2 times,0.6 times and0.6 times.Sucralose is used as a sweetener,and the addition amount is 0.8%;polyethylene glycol 6000 is used as a lubricant,and the addition amount is 3%;under this formula,the disintegration time limit is 187 s,the friability is 0.64%,and the weight difference-3.84% —+3.83%,p H5.5,protein content 7.78%,10-HDA content 1.078%,effervescent tablet appearance is complete and smooth,solution color and fragrance are delicious,taste is good,meeting the quality requirements of effervescent tablet production.
